- For the pasta salad
- 1 1 1 pound tri-colored rotini
- 8 8 8 ounces mozzarella balls
- 8 8 8 ounces salami
- 8 8 8 ounces pepperoni
- 2 2 2 cups cherry tomatoes
- 1 1 1 cup spinach
- 1/2 1/2 1/2 cup sliced red onion
- 1/2 1/2 1/2 cup pepperoncini
- For the dressing
- 3/4 3/4 3/4 cup olive oil
- 1 of 1 lemon
- 1 1 1 tablespoon salt
- 1 1 1 teaspoon sugar
- 1 1 1 teaspoon oregano
- 1 1 1 teaspoon basil
- 1 1 1 teaspoon rosemary
- 1 1 1 clove garlic, minced
Snickerdoodle Cheesecake

Preheat oven to 350º. Grease a 9"-x-13" baking pan with cooking spray
- 2 blocks cream cheese, softened
- 1/2 c. sugar
- 2 large eggs
- 1/2 tsp. vanilla extract
- pinch of kosher salt
- SNICKERDOODLE
- 2 1/4 c. all-purpose flour
- 1 tsp. salt
- 1/2 tsp. baking soda
- 1 1/2 sticks unsalted butter, melted
- 1 c. sugar
- 1/2 c. brown sugar
- 2 eggs
- 1 tsp. vanilla extract
- 1 1/2 tsp. ground cinnamon
- cinnamon sugar, for sprinkling
Salted Caramel Popcorn

- 1/2 cup un-popped popcorn kernels
- 1 tablespoon oil
- 1 cup salted butter
- 1 cup light brown sugar
- 1/2 cup maple syrup
- 1 teaspoon vanilla extract
- 1 1/2 teaspoons kosher salt, divided
- 1/2 teaspoon baking soda
- 1 cup whole almonds (optional)
Caramel Cake

Directions: Preheat your oven to 350 degrees
- Ingredients:
- Caramel Cake
- 3 sticks butter
- 3 cups sugar
- 5 eggs
- 3 1/2 cups all-purpose flour
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1 1/4 cups whole milk
- 1 teaspoon vanilla
- Caramel Icing
- 2 sticks butter
- 1 (16 oz.) box of light brown sugar
- 1/4 teaspoon salt
- 2/3 cup evaporated milk (canned)
- 2 cups sifted confectioner’s sugar
- 2 teaspoons pure vanilla extract
Macaroni Salad Ammish

Cook the macaroni according to directions, drain well
- 3 celery ribs, diced small
- 1 small sweet pepper, seeded and diced small (red or orange)
- Dressing
- 2 cups light mayonnaise (do not use Miracle Whip)
- 1/2 cup sugar
- 1/8 cup yellow mustard
- 2 tablespoons dill pickle relish
- 1 tablespoon white vinegar or 1 tablespoon apple cider vinegar
- 3/4 teaspoon celery seed
- 1/4 teaspoon salt
- paprika (to garnish)
Creamy Chicken Piccata

Heat 2 tablespoons butter and 2 tablespoons of oil in a large skillet over medium high heat
- 4 whole Boneless, Skinless Chicken Breasts
- salt and pepper to taste
- 1/4 cup all purpose flour
- 2 Tablespoons Butter
- 2 Tablespoons Olive Oil
- 1 cup chicken broth
- 2 whole Lemons
- 3/4 Cup Heavy Cream
- 1/4 cup capers
- Chopped parsley, for garnish
- 1 pound Angel Hair Pasta
Curry Noodles with Shrimp and Coconut

Cook rice noodles according to package directions, then drain and rinse well with cool water
- 12 ounces rice noodles (vermicelli)
- 1/2 teaspoon coriander seeds
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon fennel seeds
- 6 allspice berries
- 2 tablespoons coconut oil
- 1 medium onion, finely diced, about 2 cups
- 2 tablespoons finely chopped lemongrass
- 1/2 teaspoon grated garlic
- 2 teaspoons grated ginger
- Salt and pepper
- 1 1/2 teaspoons turmeric
- 1/8 teaspoon cayenne
- Zest and juice of 1 lime
- 1 teaspoon fish sauce
- 2 cups coconut milk
- 1 pound shrimp, peeled and deveined
- 1 pint cherry tomatoes, halved
- 1/2 cup slivered scallions

- 1 2/3 cups (8 1/2 ounces) bread flour
- 1 1/4 teaspoons baking soda
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons coarse salt
- 2 1/2 sticks (1 1/4 cups) unsalted butter
- 1 1/4 cups (10 ounces) light brown sugar
- 1 cup plus 2 tablespoons (8 ounces) granulated sugar
- 2 large eggs
- 2 teaspoons natural vanilla extract
- 1 1/4 pounds bittersweet chocolate disks or fèves, at least 60 percent cacao content (see note)
- Sea salt.
