Mix together all of the ingredients except the pork loin in a zipper-lock bag
- 1/2 cup olive oil
- 1 small red onion, finely chopped
- 3 cloves garlic, minced
- 4 tablespoons fresh lemon juice
- 2 tablespoons red wine vinegar
- 2 tablespoons chopped fresh oregano
- 1 teaspoon dried mint
- salt and pepper to taste
- 1 1/2 lbs pork loin, trimmed of silver skin and excess fat, cut into 1" cubes
