Lemon (Double) Bars

Preheat oven to 350 degrees
- 1 cup unsalted butter (2 sticks) -- room temperature
- 2/3 cup powdered sugar
- 2 1/4 cups all purpose flour
- 2 cups sugar
- 4 large eggs
- 7 tablespoons fresh lemon juice (with pulp)
- 1/4 cup lemon peel (from 6 large lemons) -- finely grated
- 1 teaspoon baking powder
- additional powdered sugar
Peach Cobbler, Easy

Put oven rack in middle position and preheat oven to 375 degrees
- 1 1/4 pounds peaches, firm & ripe (5 to 6 medium)
- 1 tablespoon fresh lemon juice
- 1 2/3 cups sugar
- 1 stick unsalted butter (1/2 cup) -- melted
- 1 cup all purpose flour
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1 cup whole milk
- cinnamon and nutmeg for sprinkling

- 3/4 cup unsweetened cocoa powder, plus more for dish

- 1 1/2 teaspoons baking powder
- 1/2 teaspoon kosher salt
- 5 to 6 ounces good caramel sauce, such as Fran's

- 2 tablespoons butter -- melted
- 24 each won-ton wrappers
- 6 slices prosciutto -- chopped
- 12 large eggs
- 6 tablespoons Parmesan cheese -- grated
- 1 each red pepper (jar is ok) -- cut into thin strips
- 6 slices Brie cheese (or Goat Cheese)
- 12 each tarragon leaves
- salt and pepper

- 2 Meyer lemons, thinly sliced
- 1/2 cup honey
- 1/4 cup water
- 1 cinnamon stick
- 1 3/4 cups sugar
- 1 cup butter
- 4 large eggs plus 2 yolks
- Zest and juice (1/2 cup) from 3 Meyer lemons
- 2 teaspoons vanilla extract

Cabbage with Sausage, Fried

- 1 stick butter or margarine
- 1 small head of cabbage, chopped
- 1 small onion, chopped
- 1 pound smoked sausage, sliced into round pieces (I use turkey)
- 1 (15 ounce) can diced tomatoes or rotel tomatoes
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Irish Brown Soda Bread
