Creamy Chicken Korma

One of the Indian recipes we made in our May 2010 curry feast
- 3 bay leaves
- 1 cinnamon stick
- 1 tsp crushed cardamom seeds
- 1/4 tsp crushed cloves
- 2 tsp cumin seeds
- 1 onion, peeled and finely chopped
- 1 tbsp ground coriander
- 1 tbsp ground cumin
- 2 tsp mild curry powder
- 3 tsp fresh ginger, peeled and finely chopped
- 3 tsp fresh garlic, peeled and minced
- 400 g can chopped tomatoes
- 1 kg / 2 lb 4 oz chicken breasts, skinless and boneless, cut into bite-sized pieces
- 198 ml / 7 fl oz chicken stock
- 5 tbsp fat free fromage frais
- Freshly chopped mint
Slow Cooker Chickpea and Lentil Chili

- 1 400g tin chickpeas in water, drained
- 1 large peeled and chopped sweet potato (1/2 in. cubes)
- 1 cup uncooked red lentils
- 1 cup chopped red onion
- 5 garlic cloves, minced
- 1 1/2 teaspoon ground cumin
- 1 teaspoon salt
- 1/2 teaspoon chili powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground turmeric
- 1/2 cup raisins
- 2 1/2 cups vegetable stock
- 1/2 cup water
- 1 400g tin chopped tomatoes

Slow Cooker Chicken Tagine

1. Heat cooking spray in a frying pan over medium-high heat
- 8 skinless, boneless chicken thighs, cut into 2.5cm pieces
- 1 aubergine, cut into 2.5cm cubes
- 2 large onions, thinly sliced
- 4 large carrots, thinly sliced
- 60g dried sultanas or cranberries
- 65g chopped dried apricots
- 500ml chicken stock
- 2 tablespoons tomato puree
- 2 tablespoons lemon juice
- 2 tablespoons plain flour
- 2 garlic cloves, minced
- 1 1/2 teaspoons ground cumin
- 1 1/2 teaspoons ground ginger
- 1 teaspoon cinnamon
- 3/4 teaspoon ground black pepper
- salt to taste
- 250ml water
- 175g couscous
Cheesy Vegetable Pasta Bake

- 400 g diced sweet potato and butternut squash (prepared pack, if available)
- 2 red onions, peeled and cut into large chunks
- 2 garlic cloves, minced
- 400 g baby leeks, sliced (optional)
- 200 g asparagus tips
- 300 g dried penne
- 110 g reduced fat Cheddar cheese, grated
- 500 g passata
- 1 tsp dried mixed Italian herbs
Gingerbread People

An easy to roll and tasty gingerbread recipe
- 2 1/2 cups flour
- 1 tbsp ground ginger
- 1 tsp baking soda
- 1/4 tsp ground cinnamon
- 1/4 tsp salt
- 3/4 cup packed dark brown sugar
- 1/2 cup butter, softened
- 1/4 cup golden cane syrup (such as Lyle's Golden Syrup)
- 2 tbsp molasses
- 1 large egg
Mexican Pork and Rice

Very good mexican, modified slightly to be a bit more healthy
- 1 pound of lean pork chops
- Cumin for sprinkling
- Chile powder for sprinkling
- 1 green pepper, chopped
- 1 onion, chopped
- 2 cloves of garlic
- 1 can of diced tomatoes
- 4 tbsp salsa
- 1/2 Lime, Juiced
- 1/4 cup of green jalapeno chiles from a can
- 1 can of black beans
- 1/2 tsp cumin
- 1/2 tsp chile powder
- 1 cup chicken stock (water with 1 OXO cube)
- 1 small bunch of cilantro, chopped
- 1 bag of 10-minute rice, uncooked (roughly 1 cup of rice, uncooked)
