Spinach Dhal

Healthy indian vegeterian
- 255 g / 9oz dried yellow split lentils
- 200 g / 7 oz baby spinach leaves, rougly chopped
- 4 shallots, very finely chopped
- 1 cm piece ginger, minced
- 2 red chillies, deseeded and finely sliced
- 8-10 fresh curry leaves (or dried leave, kept whole and removed before eating)
- 1/2 tsp turmeric
- 4 plum tomatoes, roughly chopped
Lain's Quick Cauliflower Soup

Heat large stock pot over medium heat
- 4 C cauliflower, chopped into small pieces
- 3 C chicken broth
- 1-1/2 C sliced leeks (or yellow onions if you don’t have them on hand)
- 1 tsp salt (I use sea salt)
Lentil Quinoa Bolognese Sauce

Add the lentils, carrots, and water to a large pot
- 1 cup lentils (green, brown, or beluga)
- 3 medium carrots, cut into 4 large pieces
- 1 1/2 cups water
- 1 small onion, chopped
- 1 bell pepper, cored, seeded and chopped
- 3 cloves of garlic, chopped
- 1 can crushed tomatoes
- 1 1/2 teaspoons dried oregano
- 1 1/2 tablespoons dried basil
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 cup quinoa, rinsed well
- 1/2 cup red wine or 2 tablespoons balsamic vinegar
- Salt and pepper to taste
- Cooked pasta, for serving
Chicken and Orzo Skillet Dinner

Quick and easy. Use light feta if available/desired for healthier option
- 1 pound skinless, boneless chicken breast, cubed
- 12 ounces uncooked orzo
- 2 cups chopped tomato (about 2 medium)
- 2 tsp tomato paste
- 3/4 cup passata or tomato sauce
- 3 cups baby spinach
- 3/4 cup feta cheese
Greek Lamb with Macaroni (Slow Cooker)

Nice flavour, easy slow cooker dish
- 1 kg boneless lamb, cubed
- 1 large onion, chopped
- 2 garlic cloves, crushed
- 400 g tinned chopped tomatoes
- 60 g tomato sauce or pasatta
- 500 ml (2 cups) beef stock
- 2 tbsps wine vinegar (red preferred)
- 1 tbsp brown sugar/Splenda blend
- 1 tsp dried oregano
- 200 g (2 cups) macaroni pasta, dried
Blackberry and Apple Loaf

I needed a way to use the blackberries we picked at Ankerwycke and found this recipe on BBC Good Food
- 250 g self-raising flour
- 175 g butter
- 100 g brown sugar
- 75 g sugar
- 1/2 tsp cinnamon
- 2 rounded tbsp sugar
- 1 small eating apple (not cored or peeled)
- 2 large eggs, beaten
- 1 orange, finely grated zest
- 1 tsp baking powder
- 225 g blackberries
Tarragon Fish

- 4 fillets of cod, boneless and skinless
- 1 cup of non-fat plain yogurt
- 2 tablespoons fresh tarragon
- 1/4 cup reduced fat shredded cheese
Thai Rice Noodles with Chicken

Really healthy thai noodle recipe
- 1/4 cup fresh lime juice, divided
- 3 skinless and boneless chicken breasts, cut into cubes
- 8 ounces rice noodles (prefer 1/2 inch thick, dried variety)
- 1 tbsp Splenda/brown sugar blend
- 1 tbsp water
- 1 tbsp fish sauce
- 1 tbsp soy sauce
- 1 tsp (cube) frozen red chilli
- 1/4 tsp salt
- 3 tbsp thinly diagonally sliced green onions
- 1 tsp grated peeled fresh ginger
- 1 tsp minced garlic
- 1/2 cup torn fresh basil
- 1/4 cup very thinly sliced lemongrass (tough outer stalks removed)
Pad Thai

This is a healthy version of the world's favorite Thai noodle dish
- 300 g medium, flat dried rice noodles
- 400 g tofu, diced into 1.5 cm pieces
- 3 garlic cloves, crushed
- 1 red onion, sliced
- Handful of baby mushrooms, sliced
- 3 eggs, beaten
- 1 tbsp sugar or sweetener
- 3 tbsp fish sauce
- 3 tbsp lime juice
- 4 spring onions, very finely sliced
- 100 g bean sprouts
- 1 tsp dried chilli flakes
- 2 limes, cut into wedges
Quorn Bulgar Salad

This is really delicious with Quorn but could be made with chicken instead
- 1 large red pepper, chopped
- 1 courgette, sliced
- 1 aubergine, chopped
- 2 tbsp pine nuts
- 2 x 140 g packs Quorn Fajita Strips or 1 x 300 g pack Quorn Chicken Style Pieces
- juice of 1-2 lemons
- 1 tsp ground cumin
- 1 tsp ground coriander
- 400 ml (3/4 pint) vegetable stock
- 250 g (9 oz) bulgar wheat or couscous
- 3-4 tbsp chopped flat leaf parsley
