Slow Cooker Aloo Gobi

This is a nice cauliflower curry, which we made for Marikki's Christmas meal in 2014
- 1 large cauliflower, cut into 1-inch pieces
- 1 large russet potato, peeled and diced
- 1 medium onion, peeled and diced
- 1 medium tomato, diced
- 1 2-inch piece of fresh ginger root, peeled and grated
- 2 cloves garlic, peeled and grated
- 2 jalapeño peppers, stemmed and sliced (seeds and all, if you like it very spicy; otherwise, remove the seeds, or use 2 cubes of frozen chili)
- 1 tbsp cumin seeds
- 1 pinch cayenne pepper (optional)
- 1 tbsp garam masala
- 1 tsp salt
- 1 tsp turmeric
- 3 tbsp water
- 1 heaping tbsp fresh cilantro, roughly chopped
Poppy Seed Bread (from Brian Winter)

- Glaze:
- 3 cups flour
- 1 1/2 tsp salt
- 1 1/2 tsp baking powder
- 3 eggs
- 1 1/2 cups milk
- 1 1/8 cups oil
- 2 1/4 cups sugar
- 1 1/2 tbsp poppy seed
- 1 1/2 tsp vanilla
- 1 tsp almond flavoring
- 1 1/2 tsp butter flavoring
- 1/2 tsp butter flavoring
- 1/2 tsp almond flavoring
- 1/2 tsp vanilla
- 1/4 cup orange juice
- 3/4 cup powdered sugar
Slimming World Spinach Lasagne

1) Preheat oven to 180 degrees c
- 600 g nonfat cottage cheese
- 350 g frozen or fresh spinach
- 1 egg
- 1 tbsp ground spinach
- 9-10 lasagne sheets
- Salt and pepper
- 700 g passata
- Grated low-fat cheese
Chicken Provençale

Can also be made with Quorn fillets, defrosted
- 4 large chicken breasts
- 1 tbsp Herbes de Provence
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 2 peppers (green, red or yellow), cut into wide strips
- 2 medium courgettes, sliced
- 400 g tin chopped tomatoes
- 1 vegetable stock cube
- 2 tbsp fresh parsley, chopped
Herbed Minced Beef and Vegetable Couscous

This healthy moroccan-inspired couscous salad is nice at room temperature with a bit of nonfat yogurt to top it off
- 7 ounces couscous
- 10 fluid ounces boiling hot vegetable stock
- 1/2 pound extra lean minced beef
- 1 red pepper, deseeded and finely chopped
- 1 carrot, finely diced
- 1/2 pound green beans, cut into 1.5cm lengths
- 1 teaspoon ground cumin
- 1 teaspoon curry powder
- 2 tablespoon finely chopped fresh mint
- 2 tablespoon finely chopped fresh coriander
- 1 tomato, finely chopped
- 4 tablespoon fat free natural yogurt, to serve
Baked Halibut

If you are in the Pacific Northwest and have access to fresh halibut, this recipe is amazing
- 4 halibut filets, boneless and skinless
- 1 cup very low fat fromage frais or nonfat sour cream
- 4 tbsp extra light mayonnaise
- 2 tbsp traditional wholegrain mustard
- Paprika
Shannon's Healthy Meatloaf

Finally figured out a yummy meatloaf option that doesn't use breadcrumbs
- 1 small onion, finely chopped
- 1 clove garlic, crushed
- 2 carrots, finely diced
- 2 sticks celery, finely diced (optional)
- 400 g tin of chopped tomatoes
- 1 beef stock cube
- 1 tbsp Worcestershire sauce
- 1 tbsp tomato puree
- 1 tsp dried mixed herbs
- 300 g extra lean minced beef
- 75 g Smash instant potato
- 1 egg, lightly beaten
- 28 g fresh flat-leaf parsley, chopped
Shannon's Slow Cooker Sausage and Beans

This was my attempt to blend my friend Danielle's sausage recipe with one from Slimming World
- 8 low-fat cumberland or similar sausages
- 1 400 g tim chopped tomatoes
- 150 ml passata
- Dash of soy sauce
- Dash of Worcestershire sauce
- 1 1/2 tsp thyme
- 1 400 g tin cannellini beans, drained
- 1 400 g tin borlotti beans, drained
- 200 g bacon, visible fat trimmed off, sliced into small pieces
Butternut Squash & Spinach Lasagna

I used to make this recipe with a cheese sauce but have adapted it now to make it healthier
- 3 leeks, chopped
- 1 tbsp fresh sage, chopped
- 3 cloves garlic, minced
- 1 large butternut sqaush, peeled and cubed (or if available, you can use 1 bag of cubed butternut squash and sweet potato mixture)
- 1 cup water
- 1/4 tsp black pepper
- 10 oz frozen chopped spinach, thawed and squeezed dry or equivalent fresh spinach
- 500 ml nonfat plain yogurt
- 2 eggs
- 1/4 tsp ground nutmeg
- 12 lasagna noodles, cooked (or no cook required)
Tomato and Bean Chilli

- 1 onion, finely diced
- 3 garlic cloves, minced
- 2 red peppers, diced
- 1 tbsp ground cumin
- 1 tbsp ground coriander
- 2 frozen chili cubes
- 1/2 tsp paprika
- 2 x 400g tins chopped tomatoes
- 2 x 400g tins kidney beans in water, drained
