Elvis Banana Split

It's HOT and everybody's screaming for ice cream! Here's one that would make even the king proud!
- 1 medium banana
- 3 scoops Peanut Butter ice cream
- 3 tablespoons hot fudge sauce
- 2 slices bacon, cooked and crumbled (or 2 tablespoons packaged real bacon bits)
- Sweetened whipped cream
- 1 maraschino cherry
- NOTE: You can make your own PB ice cream by slightly softening 1/2 gallon vanilla ice cream then combining with 1/4 cup peanut butter and refreezing.
Jalapeno Cheddar Biscuits

- 2 cups self-rising flour (White Lily brand recommended)
- 1/4 cup cold shortening
- 2 tablespoons cold butter
- 1 cup shredded sharp cheddar cheese
- 2 tablespoons finely diced pickled jalapenos (from jar)

- Melted butter for brushing tops

Cornmeal Spinach Soup

Hearty, coarse cornmeal (polenta) soup, with or without fresh spinach
- 2 (14.5-ounce) cans reduced sodium chicken broth
- 1 cup polenta (coarse yellow cornmeal)
- 4 tablespoons margarine or salted butter
- 3 tablespoons all purpose flour
- 2 garlic cloves, peeled and split in half lengthwise
- Coarse kosher salt, to taste
- Freshly cracked black pepper, to taste
- 1 to 2 handfuls fresh baby spinach leaves

- 2 (12-16 oz) packages frozen crawfish tails, thawed*
- 5 tablespoons salted butter
- 1 medium onion, chopped (1 cup)
- Half a medium green bell pepper, chopped (1/2 cup)
- Half a rib of celery, chopped (1/4 cup)
- 2 - 3 cloves garlic, finely chopped or minced (2 tsp)
- 4 tablespoons all-purpose flour
- 1 (14.5 oz) can chicken broth (with enough water to measure 2 cups)
- 4 tablespoons Hunt's tomato sauce
- 1 teaspoon kosher salt
- 1/8 teaspoon garlic salt
- 3/4 teaspoon Tony Chachere's Original Creole seasoning, or to taste
- 1/4 teaspoon freshly cracked black pepper
- 1/8 teaspoon ground white pepper
- Dash of cayenne pepper, optional
- 2 teaspoons dried parsley flakes (or 3 Tbl. finely chopped fresh parsley)
- 3 green onion tops, thinly sliced (about 1/3 cup)
Frog Eye Salad

Addictive fruit and tiny pasta refrigerated salad
- 8 ounces Acini di Pepe pasta (about 1 1/8 cups dry)
- 1 cup pineapple juice* (drained from the pineapple)
- 2-3 teaspoons fresh lemon juice
- 1 (4-serving size) box vanilla instant pudding mix (I used S.F.-F.F.)
- 1 (20 oz) can pineapple chunks or tidbits in juice*, chilled
- 1 (20 oz) can crushed pineapple in juice*, chilled
- 2 (11 oz) cans mandarin oranges, chilled, drained well
- 2 - 3 cups mini marshmallows
- 1/2 cup sweetened flaked coconut
- 1 (8 oz) container Cool Whip, thawed

- Yogurt or white chocolate covered small round pretzels
- Assorted colors of candy melts (you can combine some of them)
- Mini M&M's or other small round candies or candy beads
- Waxed paper
- Plastic ziptop sandwich bags (one for each color of melted candy)
Old-Fashioned Hot Water Cornbread

- 2 cups self-rising cornmeal
- 1/4 teaspoon salt
- 1 1/2 - 2 cups boiling water
- Oil for frying
- 2 tablespoons bacon fat, optional

Crushed pineapple, sliced bananas, coconut, lemon juice, and sugar are cooked down to preserves
- 1 (20-ounce) can crushed pineapple, in juice, undrained
- 4 medium size bright yellow bananas, sliced
- 1/4 cup lightly packed flaked coconut, chopped in food processor
- 1 1/2 cups sugar
- 1/4 cup fresh lemon juice (1 or 2 lemons)
