1. Heat gas or charcoal grill
- 4 boneless skinless chicken breasts (4 to 5 oz each)
- 1/2 teaspoon salt-free garlic-herb blend
- 1/2 cup reduced-fat ranch dressing
- 1/4 cup water
- 2 cups quartered small red potatoes
- 1 cup ready-to-eat baby-cut carrots, cut in half lengthwise
- 1/4 lb fresh green beans, trimmed

This refreshing recipe goes well with grilled fish or chicken
- 1/4 cup lemon juice
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 2 garlic cloves, minced
- 1 teaspoon salt

- 1 teaspoon Dijon mustard
- 1/2 teaspoon pepper
- 2 packages (5-1/2 ounces each) torn mixed salad greens

Monte Cristo Casserole

Preheat oven to 375. Cut the slices of thawed French toast into 3/4 inch cubes
- 2 packages (12.5 ounces each) frozen French toast slices, thawed
- 1 cup milk
- 6 eggs
- 1 cup of thick sliced deli baked ham, diced
- 1 cup thick sliced deli roast turkey, diced
- 8 ounces or 2 cups shredded Swiss cheese
- 1/4 cup fresh chopped parsley
- powdered sugar
- 24 oz container of frozen strawberries slices, thawed and drained (see note below)
- 1/2 cup strawberry jam or ice cream topping (I used my homemade freezer jam)

- 1 package (8 ounces) coleslaw mix
- 1 large orange, peeled, chopped
- 1/4 cup Mazola® Pure Olive Oil

Low-Fat Chicken Salad Recipe with Curry & Apricots

For the chicken, I poached two chicken breasts and then chopped the meat once it cooled
- 2 cooked skinless, boneless chicken breasts, diced
- 10 dried apricots, cut into small pieces
- 1 stalk celery, diced
- 1 green onion, thinly sliced
- 1/4 cup + 2 tbsp plain, nonfat Greek yogurt
- 1 1/4 tsp curry powder
- 1/4 - 1/2 tsp salt, to taste*
- Pepper, to taste
- 1/4 tsp ground pepper
- Makes 3 cups
