Great Grandma Marj's Meat Loaf

Family Favorite!
- Topping:
- 1 Pound of ground beef, pork,veal,lamb or a mixture of these. ( To be honest I have only made beef and sometimes pork combination)
- 1/3 cup tomato juice
- 1/2 cup bread crumbs (not bought, dry your own white bread and break into pieces)
- 1 slightly beaten egg
- 1/4 cup finely cut onion
- 1 tsp salt and pepper
- 1/4 cup brown sugar
- 1 cup tomato juice
- 1/2 Tbs mustard
- 1 tsp vinegar
Ina's Seafood Gratin

Preheat the oven to 375 degrees F
- 1 cup seafood stock or clam juice
- 1 cup heavy cream
- 1/2 cup plus 3 tablespoons good white wine, such as Chablis, divided
- 3 tablespoons tomato puree
- 1/2 teaspoon saffron threads
- 8 ounces raw shrimp, peeled, deveined, and cut in half crosswise
- 8 ounces raw halibut, cut into1-inch chunks
- 8 ounces cooked lobster meat, cut into 1-inch chunks

- 2 (8-ounce) packages softened cream cheese
- 2 tablespoons mayonnaise
- 2 (4-ounce) packages Buddig corned beef, chopped
- 1 medium onion, chopped

Easy Peach Cobbler

A quick and easy recipe for a scrumptious Peach Cobbler with homemade whipped cream
- HOMEMADE WHIPPING CREAM:
- 2 (15-ounce) cans sliced peaches in syrup
- 1/2 cup (1-stick) butter
- 1 cup self-rising flour ( If you don't have self-rising flour, substitute 1 cup all-purpose flour mixed with 1 1/2 teaspoons baking powder and 1/8 teaspoon salt)
- 1 cup sugar
- 1 cup milk (can use buttermilk)
- 2 cups whipping cream, chilled in the fridge
- 4 tablespoons sugar
Mom's Oriental Salad

Crunchy and flavorful asian noodle salad is perfect to take to pot lucks, or serve at your next barbecue
- DRESSING:
- 2 packages Maruchan Oriental ramen noodles
- 3 tablespoons Sesame Seeds
- 1/4 cup margarine
- 1 cup sliced almonds
- 1 bunch of green onions, tops and all sliced very thin
- 1 pound package cole slaw mix
- 1 packet seasoning mix in the Ramen Noodles
- 1/2 cup sugar
- 1 packet ramen seasoning mix, from the ramen noodle package
- 1/2 cup oil
- 1/4 cup red wine vinegar
- 1 teaspoon soy sauce
Black Eye Pea Dip

Serve Cold
- 30 Oz Black Eyed Peas Drained and Rinsed
- 16 Oz Sweet Corn
- 4 Oz Green Chiles Diced
- 1/3 Cup Italian Dressing
- 2 Jalapeno Peppers Finely Chopped
- 1 Garlic Clove Finely Chopped
- 1 Medium Sized Bell Pepper Chopped
- 1 Medium Sized Onion (White or Sweet) Chopped
- 2 Stalks of Celery Finely Chopped
- 1 Large Tomato Finely Chopped (Can replace with canned tomatoes if desired)
- 2 Teaspoons Tabasco
- 1 Teaspoon Onion Powder
- 2 Teaspoons Garlic Powder
- 1 Teaspoon Sugar
- Salt and Pepper to taste

Aunt Beth's Tomato Tarts

I served these for Christmas and they were a big hit!
- 1 ~ 10 ounce can original Rotel tomatoes with green chillies, DRAINED
- 1 cup mayonnaise
- 1 ~ 3 ounce package real bacon bits (Hormel)
- 1 cup shredded swiss cheese
- 1 ~ 1.9 ounce package of fillo shells, thawed. ( in the feezer section by pie crusts)
Rosemary Roasted Butternut Squash

Butternut squash is a staple in my house during the fall months
- 1 butternut squash, peeled and cubed
- 2 cloves garlic, minced
- 2 sprigs fresh rosemary, finely chopped
- 2 tablespoons olive oil, or more to taste
- Sea salt to taste
- Ground black pepper to taste
Greek Salad

Place the cucumber, peppers, tomatoes and red onion in a large bowl
- 1 hothouse cucumber, unpeeled, seeded, and sliced 1/4-inch thick
- 1 red bell pepper, large-diced
- 1 yellow bell pepper, large-diced
- 1 pint cherry or grape tomatoes, halved
- 1/2 red onion, sliced in half-rounds
- 1/2 pound feta cheese, 1/2-inch diced (not crumbled)
- 1/2 cup calamata olives, pitted
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon Dijon mustard
- 1/4 cup good red wine vinegar
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
