Chicken Alfredo Spaghetti Squash

Instructions Melt butter in a skillet over medium heat
- 2 tbsp butter
- 2 tsp garlic minced (2 cloves)
- 1 tsp sage
- 2 tbsp flour
- 1 cup chicken broth
- 1/2 cup half and half also known as half cream
- 4 oz cream cheese cubed
- 1/2 cup Parmesan cheese shredded
- 1/2 cup chicken cooked and shredded
- 2 1/2 cups spaghetti squash cooked
- Salt pepper, and parsley, to taste
Baked Pasta with Chicken Sausage

Directions Bring a large pot of salted water to a boil
- Coarse salt and ground pepper
- 1 tablespoon olive oil
- 1 medium red onion, chopped
- 4 cloves garlic, minced
- 1/4 cup vodka (optional)
- 1 can (28 ounces) whole tomatoes with juice, lightly crushed with hands
- 1/2 teaspoon dried oregano
- 1/2 cup heavy cream
- 1 pound rigatoni
- 10 ounces baby spinach
- 12 ounces smoked chicken sausage, halved lengthwise and sliced 1/4 inch thick
- 6 ounces fontina cheese, 4 ounces cut into 1/2-inch cubes and 2 ounces coarsely grated
- 1/4 cup grated Parmesan cheese

- 2 cups all-purpose gluten-free flour (use your favorite blend, or my go-to blend: 1 cup plus 2 tablespoons superfine white rice flour plus 7 tablespoons potato starch plus 4-1/2 tablespoons tapioca flour/starch)
- 1/2 teaspoon xanthan gum
- 3/4 teaspoon baking soda
- 1-1/2 teaspoons ground cinnamon
- 1 teaspoon ground ginger
- 1/4 teaspoon kosher salt
- 1/3 cup packed light brown sugar
- 1/4 cup granulated sugar
- 1/3 cup warm water
- 5 tablespoons vegetable shortening, melted
- 4 tablespoons unsulphured molasses
- 2 tablespoons honey
- 1/2 teaspoon pure vanilla extract

1 Preheat the oven to 350°F Line a 12-cup muffin tin with liners
- Bowl 1 Ingredients:
- 2/3 cup all-purpose flour
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 2 teaspoons pumpkin pie spice
- Bowl 2 Ingredients:
- 1 (15 ounce) can pumpkin puree
- 1/2 cup sugar (I used 1/2 c. all natural Stevia in the Raw which has no calories/carbs)
- 1/4 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3/4 cup fat-free evaporated milk (I used 3/4 1% milk with 2 tbsp cornstarch whisked in to thicken slightly and provide less fat/calories)

- 2 cups sugar
- 1-3/4 cups all-purpose flour
- 3/4 cup cocoa powder
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 teaspoon salt
- 2 eggs
- 1 cup milk
- 1/2 cup vegetable oil
- 2 tsp vanilla extract
- 1 cup boiling water
- Chocolate Mousse Filling* (recipe follows)
- Chocolate Frosting* (recipe follows)
- 1/2 cup hot water
- 4 Tbsp cocoa powder
- 1 1/2 cups semi-sweet chocolate chips
- 2 cups heavy cream
- 2 Tbsp sugar
- 6 Tbsp milk
- 3 Tbsp cocoa powder
- 1/2 cup butter (one stick)
- 3 3/4 cups confectioners' sugar
Eggplant and Tomato Pasta

- 1 medium eggplant, peeled and cut into 1/2-inch cubes

- 1 cup (226 grams) unsalted butter, chilled, and cut into 1 inch (2.5 cm) pieces

- 1/2 cup water
