- For the Crust:
- 2 1/2 cups all-purpose flour
- 2 teaspoons granulated sugar
- 1 teaspoon salt
- 1 1/4 cups unsalted butter, cubed and chilled
- 1/4 to 1/3 cup ice water
- For the Pie Filing:
- 1/2 recipe Salted Caramel Sauce
- 5 tart-crisp apples, peeled, cored and sliced 1/8-inch thick (I used a mix of Granny Smith, Fuji and Honeycrisp)
- 3/4 cup lemon juice
- 2/3 cup granulated sugar
- 3 tablespoons all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground allspice
- 1/8 teaspoon ground nutmeg
- For the Egg Wash Topping:
- 1 egg, lightly beaten with a fork
- 1 teaspoon granulated sugar

- A pinch each of kosher salt and fresh black pepper
- 2 Tbsp mayonnaise

- 1/4 to 1/2 tsp Sriracha sauce, to taste (start with 1/4 tsp)

Directions In a large bowl, combine yeast, warm water and sugar

- 1 teaspoon sugar

- 1 tablespoon italian seasoning, herbes de provence, or other dried herb blend (optional)
