Key Lime Icebox Cake

Add the lime juice once you've fully cooked the custard to let the cornstarch thicken the mixture properly
- 3/4 cup granulated sugar
- 1/4 cup cornstarch
- 1/8 teaspoon kosher salt
- 4 large egg yolks
- 2 cups half-and-half
- 3 tablespoons butter
- 2 tablespoons Key lime zest*
- 1/2 cup fresh Key lime juice*
- 45 graham cracker squares
- 1 cup whipping cream
- 1/4 cup powdered sugar
Triple Berry Dutch Baby

Place a rack in the center of the oven and preheat oven to 425 degrees F
- 1/3 cup granulated sugar
- 1 teaspoon ground cinnamon
- 3 large eggs, at room temperature for 30 minutes
- 2/3 cup whole milk, at room temperature
- 2/3 cup all-purpose flour
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon salt
- 4 tablespoons unsalted butter
- 2 cups fresh berries (I used sliced strawberries, fresh raspberries, and fresh blueberries)
Baby Artichoke and Scallion Saute

Trim away the artichokes’ outer dark leaves and discard
- 20 to 24 baby artichokes
- Juice of 2 lemons
- 3 tablespoons chopped parsley leaves
- 1 garlic clove, chopped
- 2 teaspoons lemon zest
- 2 tablespoons extra-virgin olive oil
- 1 bunch scallions, including an inch of the greens, thickly sliced
- 1/2 cup dry white wine
- 1 tablespoon chopped tarragon

Ribeye Steak in Salsa Borracha

- 2 pounds of ribeye with a good amount of fat
- 1 medium white onion, diced
- 4 cloves garlic, minced

- 2 tbsp. butter
- 1 cup slivered almonds
- 3 shallots, peeled and chopped

- 1/4 cup chopped fresh Italian parsley leaves
- 1 large egg
- 3 tablespoons ketchup
- 3 garlic cloves, minced
- 1 teaspoon salt
- 1/4 teaspoon ground black pepper
- 2/3 cup grated Parmesan
- 1/4 cup dried Italian-style bread crumbs
- 6-ounces ground beef
- 6-ounces ground veal
- 6-ounces ground pork
- 1/3 cup extra-virgin olive oil
- Marinara sauce, recipe follows or 26-ounce jar, store-purchased
