Separate the chicken legs from the thighs, and season with salt and pepper, to taste
- 4 pounds chicken leg quarters
- Kosher salt and freshly ground black pepper
- 1/2 cup all-purpose flour
- 1/4 cup canola oil
- 4 carrots, sliced
- 3 celery stalks, sliced
- 1 medium onion, chopped
- 1/2 (8-ounce) package sliced mushrooms
- 1 cup frozen corn
- 2 (14-ounce) cans chicken broth
- Water
- 1 cup baking mix
- 1 teaspoon poultry seasoning
- 1/3 cup milk
Cuban Ropa Vieja

Heat vegetable oil in a large skillet over medium-high heat
- 1 tablespoon vegetable oil
- 2 pounds beef flank steak
- 1 cup beef broth
- 1 (8 ounce) can tomato sauce
- 1 small onion, sliced
- 1 green bell pepper, seeded and sliced into strips
- 2 cloves garlic, chopped
- 1 (6 ounce) can tomato paste
- 1 teaspoon ground cumin
- 1 teaspoon chopped fresh cilantro
- 1 tablespoon olive oil

1. Heat oil in a 6-qt. saucepan over medium-high heat
- 3 tbsp. olive oil
- 1 3–4-lb. chicken, cut into 8 pieces
- Kosher salt and freshly ground black pepper, to taste
- 1/2 cup flour
- 4 cloves garlic, peeled and crushed
- 2 red bell peppers, stemmed, seeded, and finely chopped
- 2 ribs celery, finely chopped
- 1 large carrot, finely chopped
- 1 medium yellow onion, finely chopped
- 1 red Holland chile, stemmed, seeded, and finely chopped
- 2 tbsp. tomato paste
- 2 tsp. paprika
- 1 tsp. ground cumin
- 3 cups chicken stock
- 3 tbsp. finely chopped parsley
Sausage Gravy

With your finger, tear small pieces of sausage and add them in a single layer to a large heavy skillet
- 1 pound breakfast sausage, hot or mild
- 1/3 cup all-purpose flour
- 3 to 4 cups whole milk, more to taste
- 1/2 teaspoon seasoned salt
- 2 teaspoons freshly ground black pepper, more to taste
- Biscuits, warmed, for serving
Homemade Cranberry Nut Granola

Preheat the oven to 350 degrees F
- 1/3 cup pumpkin seeds
- 1/4 cup sunflower seeds
- Nonstick cooking spray
- 1/3 cup maple syrup
- 2/3 cup packed brown sugar
- 1/2 cup unsweetened cranberry juice

- 1 package frozen Pepperidge Farm puff pastry, defrosted
- 1/4 cup prepared pesto, store bought or homemade (recipe follows)
- 1/2 cup crumbled goat cheese, such as Montrachet
- 1/4 cup finely chopped sundried tomatoes in oil, drained
- 1/4 cup toasted pine nuts
- Kosher salt
- 1/4 cup walnuts
- 1/4 cup pignolis
- 3 tablespoons chopped garlic (9 cloves)
- 5 cups fresh basil leaves, packed

Butternut Squash Tamales

These Butternut Squash Tamales have tons of flavor, not difficult, a fantastic option for a meatless Monday meal
- 16 About 16 corn husks or 22 corn husks for smaller tamales (soaked in water until soft)

- 3 cups masa harina, preferably Columbian such as Pan Harina
