I brought these Red Chili Brisket Tamales to a family get together and everyone loved them, the cilantro sour cream
- 3 pounds beef brisket
- 2 tablespoons kosher salt
- 6 cups water, divided
- 4 tablespoons canola oil
- 2 cups enchilada sauce, store-bought
- 24 tamale husks
- 2 cups masa harina (fine corn flour)
- 3 to 4 cups water
- 2 tablespoons melted butter
- 1 tablespoon kosher salt, or to taste
- 1 container sour cream
- 2 tablespoons cilantro leaves, chopped
- 1 garlic clove, minced
- 1 lime, juiced
- Salt and freshly ground black pepper
Kicked up Roast Beef Dinner

- 3-pound beef rump roast
- 1/4 teaspoon Sea Salt
- 1/4 teaspoon ground black pepper
- 5 tablespoon unsalted butter
- 1 cup chopped yellow or red onion
- 4 carrots, peeled and sliced into 1/2-inch rounds
- 4 stalks celery sliced into 1/2-inch thick

Curried Chicken and Apple Wraps

In a large bowl, combine the chutney, yogurt, curry powder, oil, lime juice, salt and pepper
- 1/3 cup mango chutney
- 1/3 cup 2-percent plain Greek-style yogurt
- 1 tablespoon curry powder
- 1 tablespoon extra-virgin olive oil
- 2 teaspoons fresh lime juice (about 1 large lime)
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
