Broccoli &Hash Brown Casserole

Preheat oven to 375 degrees F
- 2 teaspoons canola oil
- 1/2 cup chopped onion
- 1 1/2 cup frozen chopped broccoli, thawed
- 2 tablespoons all-purpose flour
- 1 1/2 cup fat-free milk
- 1 teaspoon garlic powder
- 1/8 teaspoon ground nutmeg
- 1/2 teaspoon salt (optional)
- 1/4 teaspoon black pepper
- 3/4 cup reduced-fat shredded Cheddar cheese
- 1 (20-ounce) package refrigerated shredded hash brown potatoes
- 4 multi-grain crackers, coarsely crushed
- Cooking spray
Mel’s Diner Chili

Brown the beef, onion and garlic
- 2 lbs ground beef (I used 1 lb. pork sausage + 1 lb. ground beef)
- 1 onion, chopped
- 2 cans tomato paste (6 oz cans)
- 6 tomato paste cans of water
- 1 clove garlic, minced
- 1 can kidney beans, rinsed and drained
- 2 packs low-sodium chili seasoning mix
- 1 can Fire Roasted tomatoes, undrained
- salt and pepper to taste
Slow Cooker Chicken Parmesan

Spray the crock with non-stick spray
- Sauce:
- 1 bag (26-32 oz) frozen fully cooked breaded chicken strips or nuggets (see NOTES)
- 8 oz sliced mozzarella cheese
- 1 can (28 oz) petit diced tomatoes
- 1 can (6 oz) tomato paste
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp pepper
- 1 tsp oregano
- 1 tsp basil
- 1/4 cup brown sugar (see NOTES)
Chicken Tostadas

Heat oil in large skillet on medium heat
- 1 tablespoon oil
- 1 pound boneless skinless chicken breasts, cut into thin strips
- 1 package McCormick Chicken Taco Seasoning Mix
- 1/2 cup water
- 6 tostada shells (6-inch)
- 1 1/2 cups refried beans, warmed
Pecan Pie

Preheat the oven to 325 degrees F
- 1 cup light brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 1 cup chopped pecans
- 1/2 cup (1 stick butter), melted
- 2 tablespoons milk
- 1 tablespoon all-purpose flour
- 1 1/2 teaspoons vanilla extract
- One 9-inch deep dish pie shell, unbaked, or homemade pastry
- 1 cup pecan halves
- Vanilla ice cream or whipped cream, for serving
Turkey Salad Sandwiches

A Good Way to get rid of that extra Thanksgiving Turkey
- 1 1/2 cups diced cooked turkey
- 1/2 cup diced unpeeled apple
- 1/2 cup mayonnaise or salad dressing
- 1 1/2 teaspoons curry powder
- 1/4 teaspoon ground ginger
- 1/4 teaspoon pepper
- 1 medium stalk celery, chopped (1/2 cup)
- 2 green onions, chopped (2 tablespoons)
- 8 slices whole grain bread

Put chicken in crockpot. Sprinkle with seasoning
- 4 chicken leg quarters
- 2 tablespoons Mrs. Dash's Gallant Garlics Roasted Garlic Pepper seasoning
- 1 can Del Monte Zucchini with Tomato Sauce
- 3 ounces shredded mozzarella cheese
Chicken Wontons

In a small bowl mix together sweet chili sauce, lime juice, cilantro and sesame seeds
- 1/2 lb ground chicken
- 1/4 lb shrimp (chopped into small pieces)
- 1 green onion (sliced)
- 1/2 teaspoon cornstarch
- 1/4 teaspoon salt
- 1 dash fish sauce (optional)
- 1/2 teaspoon sesame oil
- 3 dashes ground white pepper
- 12 wonton wrappers
- water (for sealing)
- Oil (for deep frying)
- Dipping Sauce-
- 3 tablespoons Thai sweet chili sauce
- 2 teaspoons lime juice
- 1 tablespoon chopped cilantro leaves
