- 5 1/4 ounces unsalted butter, cut into tablespoon-size pieces, at room temperature
Chicken Gyros

To make the tzatziki sauce, strain the yogurt using cheesecloth over a bowl
- For the tzatziki:
- 16 oz. plain yogurt (not nonfat, if possible)
- 1/2 hothouse cucumber or 1 regular cucumber, peeled and seeded
- 2-3 cloves garlic, pressed through a garlic press (or finely minced)
- 1 tsp. white wine vinegar
- Salt and pepper
- Squeeze of fresh lemon juice
- Extra virgin olive oil
- For the chicken:
- 4 cloves garlic, smashed
- Juice of 1 lemon
- 2 tsp. red wine vinegar
- 2 tbsp. extra virgin olive oil
- 2 heaping tbsp. plain yogurt
- 1 tbsp. dried oregano
- Salt and pepper
- 1 1/4 lbs. chicken pieces (I use boneless, skinless chicken breast halves)
- Pita bread
- Fresh tomatoes, seeded and diced
- Red onion, sliced thin
Snickerdoodle Muffins

1.Cream the butter and sugar until soft about 3 to 5 minutes
- 2 sticks unsalted butter
- 1 cup sugar
- 2 tsp vanilla
- 2 eggs
- 3/4 tsp baking soda
- 3/4 tsp baking powder
- 3/4 tsp cream of tartar
- 3/4 tsp freshly grated nutmeg
- 1 1/4 cup sour cream
- 2 1/4 cups all purpose flour
- 1/2 cup sugar and 1 TBSP cinnamon mixed together for rolling*

To make the base- preheat your oven to 180 degrees c
- For the Base
- 1 cup plain flour
- 1/2 cup brown sugar (firmly packed)
- 1/2 cup desiccated coconut
- 125 grams butter (melted)
- For the Caramel
- 60 grams butter
- 395 gram can sweetened condensed milk
- 2 tablespoons golden syrup
- For the Topping
- 185 gram block dark eating chocolate
- 2 teaspoons vegetable oil

- For the Brownies:
- 1 stick (8 tablespoons) unsalted butter, at room temperature
- 1 cup granulated sugar
- 2 tablespoons cocoa, plus more for pan

- 3/4 cup flour
- pinch of kosher salt
- For the Ice Cream Sandwiches:
- 1 quart vanilla ice cream, slightly softened
- 2 pounds chocolate chips

- 1 cup butter
- 1/2 cup water
- 4 tablespoons unsweetened cocoa powder
- 2 cups all-purpose flour
- 2 cups white sugar
- 1 teaspoon baking soda
- 1/2 cup buttermilk

- 1 teaspoon vanilla
- FUDGE FROSTING:
- 6 tablespoons milk

Popover's with Raspberry Butter

- 2 C milk, room temperature
- Raspberry Butter
- 1 stick (1/4 lb) unsalted butter, room temperature
- 1/4 C raspberry preserves
- 2 Tbsp powdered sugar
Quinoa Pizza Bites

1. Preheat oven to 350 degrees
- 2 cups cooked quinoa
- 2 large eggs
- 1 cup chopped onion
- 1 cup shredded mozzarella cheese
- 2 tsp minced garlic
- 1/2 cup fresh basil, chopped
- 1 cup chopped pepperoni slices (~1/2 of a 7 oz bag)
- 1/2 tsp seasoning salt
- 1 tsp paprika
- 1 tsp dried crushed oregano

French Toast Souffle

1. Place bread cubes in a lightly greased 9x13 baking pan
- 1 bakery loaf of butter crusty bread-10 cups cut into 1-inch cubes
- 8 (ounces) low-fat cream cheese, softened
- 8 large eggs
- 1-1/2 cups milk
- 2/3 cup half and half cream
- 1-1/4 cups maple syrup
- 1/2 teaspoon vanilla
- 2 tablespoons powdered sugar
