Taco Pie

Press rolls into 9x11 pan
- 1 8oz can crescent rolls
- 1 lb ground turkey
- 1 package taco seasoning mix-McCormick’s mild)
- 8 oz mozzarella cheese
- 3/4 cup tomato paste (small can)
- 2 tablespoons chopped onion
- 2 tablespoons chopped bell pepper
- 1/2 cup water
- 1 tablespoon beef bouillon
Dip - Carol Donalson's Fruit Dip

Drain yogurt by placing in coffee filter lined strainer for 1 hour
- 1 8 oz vanilla yogurt, drained
- 2 tablespoons sugar, Equal or Sweet & Low
- 1 tablespoon almond extract
- 1 tablespoon almonds, toasted and chopped
Salads - SPINACH SALAD

Gradually add 3 tablespoons red wine or vinegar or tarragon vinegar
- Stir together:
- 1/2 cup sour cream
- 2 tablespoons sugar
- 1/2 teasps dry mustard
- 1/4 teasp salt
Soups - Gayle Lovette's Vegetable-Barley Soup

Brown hamburger meat with chopped onion, drain
- 1 1 1 zuccini squash, diced, 1 large potato diced, and fresh parsley (optional).
Vegetables - Sweet Potato Casserole

Mix well and stir. Pour over top and bake on 350 degrees for 35 minutes
- Topping:
- 1 large can sweet potatoes (beat till smooth with mixer)
- 1 1/2 cups sugar
- 3 ggs
- 1/2 cup milk
- 2 sticks margarine, melted (Pour 1/2 cup margarine in sweet potatoes and save rest for top)
- 1 teaspoon vanilla
- Mix and pour in greased casserole
- 1 cup light brown sugar, 1/4 cup flour, left over margarine, 1 cup chopped nuts
Dip - Vegetable Dip

Cream together the cream cheese and margarine with mixer until smooth
- 1 package of Knorr Vegetable Soup Mix
- 2 - 8 oz packages of cream cheese
- 4 tablespoons margarine
- 1/4 cup milk
- 1/4 teaspoon pepper
Desserts - Tangy Lemon Merinque Pie

Pie Preheat oven to 325 degrees
- Pie:
- 1 - 9 inch prepared pie crust, baked
- Mile High Meringue (recipe follows)
- Lemon zest curls (optional)
- Tangy Lemon Meringue Pie Filling
- 1 1/2 cups Dmino Granulated sugar
- 1/4 cup cornstarch
- 4 large Eggland's Best eggs, lightly beaten
- 1/2 cup fresh lemon juice
- 2 tablespoons butter
- 1 tablespoon lemon zest
Vegetables -Sweet Potato Souffle (Mildred Stallings)

Bake in oven for 25-30 minutes at 325 degrees
- Topping:
- 1 large can (29 oz) Sweet potatoes (mashed)
- 1 stick margarine
- 2 eggs
- 1/3 cup evaporated milk
- 3/4 cup granulated sugar
- Mix all of the above and pour in casserole dish.
- 3/4 cup brown sugar
- 1/2 stick margarine
- 1/3 cup flour
- 1 cup chopped pecans
Desserts - Fresh Apple Cake

Cook at 300 for 1 hour. Cook in tube pan
- 1 1/2 cups butter or margarine
- 1 cup sugar
- 2 eggs
- Cream butter and sugar. Add eggs and mix well.
- 2 cups plain flour;
- 1 teaspoon baking soda
- 1 teaspoon ginger
- 1 teaspoon cinnamon
- 3 cups of chopped apples
- 1 cup chopped pecans
Vegetables - Sweet Potato Souffle

Bake on 350 degrees for approximately 30 minutes
- Crunch Topping:
- 3 cups cooked, mashed sweet potatoes
- 1 cup sugar
- 1/2 teaspoon
- 2 eggs, slightly beaten
- 2 1/2 tablespoons melted margarine
- 1/2 cup milk
- 1 teaspoon vanilla
- Melt 2 1/2 tablespoons of margarine. Add 1 cup brown sugar, 1/3 cup cup all purpose flour and 1 cup chopped pecans
