Desserts - Pineapple Casserole - Frankie Freed

Combine the pineapple and its juice with the sugar in a saucepan
- 1 (28 oz) can crushed pineapple with juice
- 1 1/4 cups sugar
- 2 1/2 cups Ritz Cracker Crumbs
- 1 stick of melted butter
- 2 1/4 cups grated cheese
Vegetables - Paula Deen's Squash Casserole

Cook squash until tender. Add all other ingredients
- 2 1/2 cups mixed squash ( 1 1/4 cup
- of yellow and 1 1/4 cup of zuchinni)
- 1 cup of chopped onion
- 1 cup of milk
- 1 cup of shredded cheddar cheese
- 2 eggs, slightly beaten
- 6 tablespoons butter, melted
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 cups of Ritz Crackers, crushed (or
- you can use 2 cups of crushed saltine
- crackers)
Marinade - Italian Marinade

Pour dressing over meat or vegetables and marinate according to type meat
- Italian Marinade: Mix 1 envelope of Good Seasons Italian Salad Dressing Mix, 1/3 cup oil, 1/3 cup dry white wine and 2 tablespoons lemon juice.
Meat - Sweet and Spicy Jerk Ribs

Cut ribs into serving sized pieces; brush with oil and rub with the jerk seasoning
- 2 racks pork baby back ribs (about 4 1/2 lbs.)
- 5 tablespoons olive oil
- 1/3 cup of Caribbean jerk seasoning
- 3 cups of honey barbecue sauce
- 3 tablespoons of apricot preserves
- 2 tablespoons honey
Beverages - Fruit Punch (Yellow)

Mix well and freeze. Makes 1 ½ gallons
- 1 large can pineapple juice
- 3 small cans frozen orange juice (add water as directed on can)
- 2 qt. Water
- 1/2 cup frozen lemon juice or 1/2 dozen lemons, juiced
- 1 6 oz pkg lemonade mix(dry)
- 2 1/2 cups sugar
Ground beef - Italian Macaroni Skillet (Gayle Lovette)

Heat oil (or spray pan first)
- 1 teasp. Olive oil
- 1 large onion (1 cup chopped);
- 1 lb lean ground beef
- 1 medium green pepper
- 2 teasp. Bottled minced garlic
- 1 (14 1/2 ox) can fat-free chicken broth
- 2 cups spaghetti sauce from jar
- 8 oz small macaroni
- 1/4 cup Parmesan cheese
- 1 small can mushrooms
- 1 teasp of oregano leaves
Vegetables -Company Potato Casserole

In a bowl, combine the potatoes, sour cream, 1 cup of cheese, carrot, onion, parsley, salt, dill and pepper
- 5 cups cooked cubed peeled potatoes
- 1 1/2 cups (12 oz) sour cream
- 1 1/4 cups shredded Swiss cheese, divided
- 1/2 cup shredded carrot
- 1/4 cup chopped onion
- 2 tablespoons minced fresh parsley
- 1 teaspoon salt
- 1/2 teaspoon dill weed
- 1/4 teaspoon pepper
- 1/4 teaspoon paprika
Desserts - Weight Watchers Apple Crisp

Preheat oven to 400 degrees
- 2 small apples, cored and cut into 1/2 “ pieces
- 2 tablespoons each of quick oats, packed brown sugar,
- flour, pinch of ground cinnamon and salt, 1 tablespoon margarine
Beverages - Punch (Orange-yellow color)

Add 1 quart ginger ale to each gallon of punch
- 1 46 oz can pineapple juice
- 3 6 oz cans frozen lemonade
- 3 6 oz cans frozen orange juice
- 3 6 oz cans water
Meat - Meat Loaf

Preheat oven to 325 degrees
- 3/4 lb. ground pork
- 3/4 lb. ground sirloin
- 1 cup quick-cooking oats
- 2 large eggs, lightly beaten
- 1/2 cup of finely chopped onion
- 1/4 cup chopped fresh parsley
- 3 tablespoons soy sauce, divided
- 1 clove garlic, minced
- 1 teaspoon Paul Deen's House Seasoning
- 1 cup tomato sauce
