Pesto Spicy Red Mustard Green

- 1/2 cup chopped pecans
- 1/4 cup pumpkin seeds
- 1/4 cup sunflower seeds
- 6 cloves garlic
- 2 bunches red mustard greens
- 1/2 teaspoon sea salt

Potato Salad - Horseradish Dill

Place the potatoes in a large pot and then add cold water to cover the potatoes by at least an inch
- 1 1/2 pound organic baby yukon gold potatoes, rinsed and scrubbed
- kosher salt
- 1/4 cup buttermilk
- 1/3 cup mayonnaise
- 1 1/2 tablespoon prepared horseradish
- 1 tablespoon minced fresh dill
- 1/4 cup green onion (scallion), minced
- freshly ground pepper
Zucchini Tacos

Zucchini
- for the zucchini:
- 1 large zucchini squash, cut into 2-inch long pieces
- 2 large eggs
- 1 cup seasoned panko bread crumbs
- 1 tablespoon flour
- 1 teaspoon chili powder
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 3 tablespoons coconut oil
- cherry pepper crema:
- 1/4 cup plain greek yogurt
- 1/4 cup half and half
- 1 lime, juiced
- 2 tablespoons diced cherry peppers (plus extra, for spreading on the tortillas if you wish)
- for the tacos:
- 12 small corn (or flour!) tortillas, warmed
- cherry tomatoes, quartered or halved
- shredded red cabbage
- thinly sliced radish
- thinly sliced scallions
- fresh cilantro
- crumbled queso fresco cheese
- lime wedges
Tomato Jam

Melt the butter in a heavy medium saucepan
- 1 tablespoon unsalted butter
- 2 tablespoons minced fresh ginger
- 2 garlic cloves, minced
- 1/4 cup cider vinegar
- 1 cinnamon stick
- 2 1/2 (or 2 cups) drained canned Italian tomatoes, seeded and coarsely chopped pounds fresh plum tomatoes—peeled, seeded and coarsely chopped—
- 1/4 cup (packed) light brown sugar
- 1 teaspoon ground cumin
- 1/8 teaspoon ground cloves
- 1/4 teaspoon cayenne pepper
- 1/4 cup honey
- Salt and freshly ground black pepper
SALAD-SHAVED RADISH AND TURNIP

Clean radish(es) and scrub turnip
- 1 enormous or 2 large radishes (to have equal parts radish and turnip)
- 1 white baby turnip
- a small sprig of dill
- a small sprig of thyme or savory
- a small sprig of tarragon or chervil
- pumpkin seed oil
- cider vinegar
- 1 to 2 teaspoons toasted pepitas (green hulled pumpkin seeds)
- fine finishing salt – I used Molokai Red to keep with the color scheme!
Chicken Grilled Tandoori

Mix all of the marinade ingredients together in a bowl
- For the marinade:
- 3 ounces plain Greek yogurt
- 2 tablespoons freshly squeezed lemon juice
- 2 tablespoons minced garlic
- 2 tablespoons grated fresh ginger Coupons
- 2 teaspoons oil
- 2 1/2 teaspoons salt
- 2 teaspoons ground Indian red pepper (use cayenne or Korean red chili powder)
- 1 tablespoon paprika
- 2 teaspoons ground coriander seeds or coriander powder
- 1 tablespoon freshly ground cumin seed (or powder)
- 3/4 teaspoon turmeric powder
- 1 teaspoon ground cloves
- 1/4 teaspoon fresh ground black pepper
- 1 1/2 teaspoons garam masala
- For the rest of the dish:
- 6 chicken leg quarters, cut into drumsticks and thighs
- 1 cucumber, sliced
- 1 medium red onion, sliced
- Cilantro for garnish (you can also use parsley)
- For the Indian-style rice, or "jeera" rice:
- 3 cups dry basmati rice
- 3 tablespoons oil, butter, or ghee
- 3 tablespoon cumin seeds
- 6 cloves
- 1 cinnamon stick
- 2 teaspoons salt or salt to taste
- 1 cup frozen peas
Naan Stuffed/Grilled

Combine the flour, baking powder, salt, and sugar in the bowl of a stand mixer fitted with the dough hook
- 5-1/4 cups unbleached all-purpose flour; more as needed (optional: sub 1 Cup whole wheat)
- 1 T kosher salt
- 1 tsp sugar
- 1/2 cup plain yogurt
- 1 large egg
- 1/4 cup olive oil and more for brushing.
- 1 1/2 C water
- 3/4 cup chopped garlic scapes, tops removed (or sub Italian parsley or cilantro packed w/ 2 cloves garlic)
- 1/2 cup fresh mint packed
- 1/2 cup roasted or smoked almonds
- 1/2 tsp. kosher salt
- 1/2 tsp black pepper
- 1/2 jalapeño or Serrano pepper- for a little kick (optional)
- 1 T lime juice 1/3 C olive oil.
- Olive oil or Melted butter for brushing
- 1 C Melty cheese- such as mozzarella, queso fresco, or paneer
Clams with Jalapeno, Lemon, and Basil

Melt butter in large pot over medium-high heat
- 3 TBS unsalted butter
- 3 garlic cloves, minced
- 1 minced jalapeño chile
- 1 chorizo sliced into coins (optional)
- 1 1/2 cups crushed tomatoes (San Marzano's are best)
- 1 cup dry white wine or vermouth
- 2 tbs fresh lemon juice
- 1 doz. littleneck clams, scrubbed
- 1- 2 Tbs chopped fresh basil or Italian parsley
- 1 1/2 Tbs corse lemon zest
