Stuffing muffins-with chorizo, dried cherries and sage

Preheat the oven to 350 F
- 4 oz Bread, cut into 1/2 inch cubes ( about 3 cups) Rosemary bread works well here.
- 1 lb fresh Mexican chorizo
- 1 medium white onion, finely chopped
- 1 medium carrot, finely chopped
- 1 celery stalk, finely chopped
- 3/4 C dried cherries
- 5 garlic cloves, finely chopped
- 2 T fresh Sage, finely chopped
- 3 eggs (For muffins only)
- 1/4 cup chicken stock ( or Use up to 1 cup if making stuffing in a baking dish)
- 2 T olive oil
- Salt and pepper to taste
Sauce - Chipotle Honey Lime

- 1/2 cup greek yogurt
- 2 chipotle chiles in adobo, minced + 2 tablespoons adobo sauce
- 1 lime, juiced
- 1 tablespoon honey or Agave' Nectar

Preheat your barbecue grill (high temp)
- 7 medium chilled tomatoes ( not too ripe, they should be firm)
- 2 small jalapeño peppers
- 1 dried chipotle pepper
- 2 cloves garlic
- 1 teaspoon salt
- 2 teaspoons lime juice
- 2 slices + tablespoons diced white onions
- 2 tablespoons cilantro, chopped

Preheat Grill In a dry skillet over medium-low heat, toast the coriander and cumin seeds for 2-3 minutes
- 1 tablespoon coriander seeds
- 1/2 tablespoon cumin seeds
- pinch dried pepper flakes
- 1/2 cup black beans, with liquids
- 1 avocado
- 1 teaspoon olive oil
- juice and zest from 1/2 lime

- 4 to 6 cooked arepas
- 4 cups shredded cooked chicken

LAMB SHANKS IN RED WINE SAUCE

Preheat the oven to 350F Pat the lamb shanks dry and sprinkle with 1 tsp of salt and black pepper
- 4 lamb shanks
- 2 tsp salt, separated
- Pepper
- 2 - 3 tbsp olive oil, separated
- 1 cup onion, finely diced (yellow)
- 1 cup carrot, finely diced
- 1 cup celery, finely diced
- 3 garlic cloves, minced
- 2 1/2 cups full-bodied red wine
- 28 oz can fire roasted tomatoes hand crushed
- 2 tbsp tomato paste
- 2 cups chicken stock (
- 5 sprigs of thyme (tied together)

Marrow Bones Roasted w/ LateNite Salad

Preheat oven to 450 degrees
- 8 to 12 center-cut beef or veal marrow bones, 3 inches long, 3 to 4 pounds total
- 1 cup roughly chopped fresh parsley
- 2 shallots, thinly sliced
- 2 teaspoons capers
- 1 1/2 tablespoons extra virgin olive oil
- 2 teaspoons fresh lemon juice
- Coarse sea salt to taste
- At least 4 1/2-inch-thick slices of crusty bread, toasted
