- 4 (5-ounce) boneless, skinless chicken breasts (pounded)
- 1 cup blackening spice (recommended: Paul Prudhomme's Chicken)
- 2 tablespoons extra-virgin olive oil
- 3 tablespoons minced garlic
- 1 cup roughly chopped marinated sun-dried tomatoes
- 1/4 cup white wine
- 3 cups heavy cream
- 3/4 cup grated Parmesan
- 1 teaspoon sea salt
- 1 teaspoon freshly ground black pepper
- 1 pound cooked fettuccine
- 1/2 cup sliced scallions
Fluffy Pancakes

- 1 cup of buttermilk
- 1/2 cup of milk
- 2 cups of all-purpose flour
- 4 tbls white sugar
- 2 tsps baking powder
- 1 tsp baking soda
- 1 tsp salt

- 4 tbls melted butter

Lakeside Inn Spiedini

Pound beef medallions to 1/8-inch thickness
- 4 pounds beef tenderloin, cut into 3- to 4-ounce medallions
- Granulated or minced garlic, to taste
- Granulated or minced onion, to taste
- Freshly grated Romano cheese
- Freshly grated Parmesan cheese
- Dried oregano to taste
- Bay leaves
- 10 to 12 ounces freshly grated mozzarella cheese
- 1 medium yellow onion, julienned
- 1 to 2 tablespoons olive oil
- Flour
- 2 eggs, beaten
- Unseasoned bread crumbs
- Vegetable oil
- Marinara sauce

Green Enchilada Sauce

1.In a medium saucepan, heat the oil over medium heat until hot
- 2 tablespoons oil
- 1/2 cup finely chopped onion
- 1-2 garlic cloves, finely minced
- 3 tablespoons flour
- 1/4 teaspoon cumin
- 1/4 teaspoon black pepper
- 1 1/2 cups low-sodium chicken or vegetable broth
- 1 cup Anaheim or poblano chiles, roasted and peeled OR 1 cup canned diced green chiles, rinsed and drained
- 1/4 teaspoon dried oregano
- 1/2 teaspoon salt
- 1 medium jalapeno, finely diced (optional)

Mom’s Meatloaf recipe from Prime Time Cafe in Disney World
- Meatloaf:
- 2 lb ground beef
- 1 lb ground pork
- 4 eggs
- 1 cup seasoned bread crumbs
- 1/2 cp diced onions
- 1/4 cp diced green peppers
- 1/4 cp diced red peppers
- 2 tbs worcestershire sauce
- Cracked black pepper to taste
- Kosher salt to taste
- Meatloaf Glaze:
- 1/2 cup ketchup
- 1 Tbsp brown sugar
- 1 Tsp Dijon mustard
- 1/2 Tsp worcestershire sauce
Dill Chicken Salad

- 1/4 cp mayonnaise
- 1 tsp distilled white vinegar
- 1/4 tsp kosher salt
- 1/4 tsp black pepper
- 1/4 tsp garlic powder
- 1 tsp dry dill
- 1 tsp Zataran's Cajun Mustard
- 1/4 cp diced red onion
- 1.5 cp cooked shredded chicken (I like to use chicken that has been grilled or pan fried and seasoned with Badia Complete Seasoning)

- For the cupcakes:
- 3/4 pound (3 sticks) unsalted butter, room temperature
- 2 cups sugar
- 5 extra-large eggs at room temperature
- 1 1/2 teaspoons pure vanilla extract
- 1 1/2 teaspoons pure almond extract
- 3 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 1 cup buttermilk
- 14 ounces sweetened, shredded coconut
- For the frosting:
- 1 pound cream cheese at room temperature
- 3/4 pound (3 sticks) unsalted butter, room temperature
- 1 teaspoon pure vanilla extract

- 1 small onion, thinly sliced, sauteed in about 1 tablespoon olive oil until caramelized

- Parsley to taste
- Salt and pepper to taste
