Heat a wok over high heat
- 1 1/2 tablespoons peanut or vegetable oil
- 3 eggs, lightly beaten
- 4 ounces pancetta or bacon, diced
- 1 clove garlic, minced
- 1 teaspoon peeled and grated fresh ginger
- 4 ounces bay shrimp
- 4 ounces fresh or frozen peas (about 3/4 cup)
- 2 cups cooked jasmine rice (preferably day old)
- 1 tablespoon light soy sauce

- 3 teaspoons salt, divided
- 1 (2 1/2- to 3-pound) chicken, cut up into 8 pieces

- 2.5 pound boneless, skinless chicken breasts (thighs would be fine too)
- Salt and pepper
- 1 cup honey
- 1/2 cup soy sauce
- 4 tablespoons diced onion
- 4 tablespoons ketchup
- 2 tablespoon canola oil
- 2 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (optional)
- 4 teaspoons cornstarch dissolved in 6 Tablespoons water
