Orange chicken in the crockpot

The cost of dining out or ordering take out has become cost prohibitive for many Western New York families
- 2 large carrots, peeled and sliced about 1/2-inch thick
- 2 large red or green bell peppers, cut into 1/2-inch chunks
- 3 cloves garlic, finely minced
- 4 boneless skinless chicken breast halves (about 2 pounds)
- 2 tsp. ground ginger
- 1 tsp. salt
- 1/2 tsp. pepper
- 8 ounces orange juice concentrate
- 2 cans Mandarin orange segments, undrained
- 2 green onions, chopped (whites and greens)
- 2 cups hot cooked rice
Slow Cooker Chuck Roast

- 3-4 lbs chuck roast
- 8 ozs tomato sauce
- 1 onion
- 1/4 cup water
- 1/4 cup cider vinegar
- 1/4 cup ketchup
- 1 tsp paprika
- 1/4 tsp beef bouillon granules
- 1/8 tsp garlic powder
- 2 tsps worcestershire sauce
- 1 tsp prepared mustard
Paleo Barbecue Sauce

Add all ingredients to saucepan and simmer on medium/low heat for 30 minutes
- 1 small can of tomato paste
- 1 cup natural apple juice
- 1 tablespoon chili powder
- 1 tablespoon hickory smoke spice
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon of cayenne pepper (add more for more kick)
Creamy Chicken-Broccoli Bake

Directions 1. Coat a 3-quart rectangular baking dish with nonstick cooking spray; set aside

- 10 ounces dried medium noodles
- 1 1/2 pounds skinless, boneless chicken breasts, cut into bite-size pieces
- 3 cups sliced fresh mushrooms
- 8 green onions, sliced
- 1 medium red sweet pepper, seeded and chopped (1/2 cup)
- 2 10 3/4 ounce cans condensed cream of broccoli soup
- 2 8 ounce cartons dairy sour cream
- 1/3 cup chicken broth
- 2 teaspoons dry mustard
- 1/4 teaspoon ground black pepper
- 1 16 ounce package frozen chopped broccoli, thawed and drained
- 1/2 cup fine dry bread crumbs
- 2 tablespoons butter or margarine, melted
EASY CARAMEL POPCORN

- 1/2 c. butter
- 1/2 c. brown sugar

- 3 teaspoons vegetable oil
- 2 pounds ground beef
- 12 ounces chopped onion
- 14 ounces slivered carrots
- 14 ounces diced celery
- 48 ounces tomatoes, canned and diced
- 2 cups cooked red kidney beans
- 2 cups cooked White kidney beans
- 88 ounces beef stock
- 3 teaspoons oregano
- 2 and 1/2 teaspoons pepper
- 5 teaspoons fresh chopped parsley
- 1 and 1/2 teaspoons Tabasco sauce
- 48 ounces marinara sauce
- 8 ounces dry pasta shell macaroni (or other pasta)
Buttermilk Fried Chicken

- 1 quart buttermilk
- Salt and pepper
- 16 assorted bone-in, skin-on chicken parts (about 6 lb. total)
- 2 cups all-purpose flour
- 1/4 cup cornstarch
- 1 teaspoon paprika
- Vegetable oil, for frying
Herb-Crusted Prime Rib Recipe

Place the first six ingredients in a food processor; cover and pulse until finely chopped
- AU JUS:
- 1 large shallot, coarsely chopped
- 6 garlic cloves, quartered
- 3 tablespoons minced fresh rosemary or 1 tablespoon dried rosemary
- 2 tablespoons minced fresh oregano or 2 teaspoons dried oregano
- 2 tablespoons minced fresh thyme or 2 teaspoons dried thyme
- 2 tablespoons minced fresh sage or 2 teaspoons rubbed sage
- 2 tablespoons olive oil
- 3 teaspoons pepper
- 1 teaspoon salt
- 1 bone-in beef rib roast (4 pounds)
- 1-1/2 cups reduced-sodium beef broth
- 1 cup dry red wine or additional reduced-sodium beef broth
- 1 teaspoon butter
- 1/2 teaspoon salt
Crock Pot Buffalo Chicken

I pour the entire bottle of Frank's Buffalo sauce right on top of the chicken
- 3 lb. bag of frozen chicken
- Frank's Red Hot Wing's Buffalo Sauce
- A packet of Hidden Valley Ranch Dip Mix.
Ham, Cheese and Fried Egg Panini

Preheat an electric panini press on the “panini” setting according to the manufacturer’s instructions
- 1 tsp. plus 1 Tbs. vegetable oil
- 12 oz. thinly sliced Black Forest ham
- 4 baguette pieces, each 6 inches long, halved horizontally
- 8 oz. Gruyère cheese, grated
- 2 Tbs. plus 2 tsp. Dijon mustard
- 1/2 tsp. minced shallot
- 1/2 tsp. honey
- 2 tsp. Champagne vinegar
- 1 Tbs. olive oil
- 2 cups mixed salad greens
- 4 eggs
- 2 Tbs. chopped fresh chives
