Kale Salad with Lemon Vinaigrette

In large bowl add first 4 ingredients
- 3 tbsp meyer lemon juice
- 1/2 tsp ground cumin
- 1/2 tsp sea salt
- 3-4 grinds pepper
- 2 tsp olive oil
- 4 cups kale cut in small pieces
- 1/2 cup sweet onion cut in thin crescents
- 1/4 cup pomegrantes or cranberries
- 3 tbsp of raw pumpkin seeds
Chia Seed Pudding

Add blueberries or strawberries for a fibre filled breakfast
- 3 tbsp chia seeds
- 3/4 cup almond milk
- 1 tsp Agave
- 1/8 tsp Vanilla
- Dash of Cinnamon
Summer Salad

- 4 ounces real roasted turkey breast
- 4 cups of baby spinach
- 1/2 cup baby mandarin orange slices
- 1 tbsp of roasted pine nuts
- 2 tbsp or more of sliced red onion
- Top with 1 tbsp of honey mustard salad dressing (recipe below).
- Enjoy!
