- 12 oz lean beef chuck for stew, cut into bite-size pieces
- 1 large onion, chopped
- 2 large carrots, diced
- 12 oz Shittake mushrooms, stems discarded and caps sliced
- 2 tsp minced garlic
- 4 cups chicken broth
- 2 cups water
- 1/2 cup barley, not quick cooking
- 3/4 tsp kosher salt
- 1/4 tsp freshly ground black pepper

1. Coat a large skillet with cooking spray; add the first six ingredients

- 1 1 1 can (14 ounces) bean sprouts, drained
