KOURABIEDES – GREEK ALMOND CRESCENTS

The little biscuits are very similar to Vanillekipferl, the darling of Europe’s Christmas time baking
- 200 200g 200g butter, softened
- 125 125g 125g (1 cup) icing sugar, sifted
- 1 1 1 teaspoon finely grated orange zest
- 1 1 1 egg
- 1 1 1 egg yolk
- 1 1 1 tablespoon brandy
- 375 375g 1/2 (2 1/2 cups) plain flour
- 1 1/2 1 1/2 1/2 teaspoons baking powder
- 1 1 1 teaspoon ground cinnamon
- 155 155g 155g (1 cup) toasted alomonds, finely chopped (I used coarse almond meal)
- to 160C 2 160C (315F). Line 2 large baking trays with non-stick baking paper.
- to an electric mixer to beat the butter, sugar and orange zest in a large bowl until pale and creamy. Add egg, egg yolk, brandy and cinnamon. Beat until well combined.
- 5cm to flour and baking powder. Using a wooden spoon, mix well. Shape tablespoons of mixture into crescents and place on trays leaving 5cm gaps between them to allow for spreading.

1. Add oil to pressure cooker and heat on high 2
- Vegetables:
- 4 tbsp vegetable oil
- 2-3 lb beef chuck roast
- 1/2 tsp celery salt
- 1/2 tsp onion powder
- ground black pepper
- 1/2 cup red wine
- 2 cups beef broth
- 2 tbsp minced garlic
- 1 tsp dried thyme
- 2 bay leaves
- 1 tsp salt
- 6 small redskin potatoes, halved
- 2 small onions, peeled and quartered
- 2 cups baby carrots
- 2 stalks celery, cut into 1 inch pieces
- 2 tbsps corn starch

In the bowl of an electric mixer combine warm milk, butter and sugar
- 1 cup milk, warmed
- 5 tbsp unsalted butter, melted
- 1/3 cup granulated sugar
- 1 pkg active dry yeast
- 1 large egg
- 1 tsp salt
- 4 cups sifted all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar
- 1 1/2 tbsp ground cinnamon
- 6 oz chopped bittersweet chocolate
- 6 tbsp unsalted butter, melted

Preheat oven to 350°. Lightly grease a 1 quart casserole dish
- Two cans corned beef hash
- six eggs
- Tabasco sauce
- 18 ounce package shredded Colby or cheddar cheese
French Onion Grilled Cheese Sandwich

1. In a heavy bottomed saucepan over medium heat, melt the butter and add the sliced onions
- 2 medium yellow onions, sliced thin, about 1/4"
- 3 tablespoons butter softened, plus additional for outsides of bread
- 3 tablespoons white wine
- 4.5 oz gruyere cheese, shredded
- 4 slices bread (I used sourdough)
