- 16 ounces mozzarella cheese, whole milk
- 1 cup flour
- 2 large eggs, beaten
- 1 cup seasoned bread crumbs
- Nonstick spray
- Scallions, sliced, for garnish
- Marinara sauce, for dipping
Baked English Muffins

These beautiful, high-rising English muffins are baked, not cooked on a griddle
- 2 1/4 cups King Arthur Unbleached All-Purpose Flour
- 1/2 cup Hi-maize Fiber
- 1 teaspoon salt
- 1 tablespoon Pizza Dough Flavor, optional
- 2 teaspoons baking powder
- 2 tablespoons sugar
- 2 teaspoons instant yeast
- 1 cup + 2 tablespoons lukewarm milk*
- 2 tablespoons melted butter
- 2 teaspoons vinegar, white or cider
- cornmeal or semolina to coat the muffins
- Or substitute 1/4 cup (1 1/4 ounces) Bakers' Special Dry Milk, and 1 cup + 2 tablespoons (9 ounces) lukewarm water; don't mix them together, the dry milk doesn't reconstitute.
Almond Breeze Slow Cooker Vanilla Spiced Oatmeal

- cooking spray
- 1 cup steel cut oats
- 1 vanilla bean, split and seeded
- 2 Tablespoons brown sugar
- 1/4 teaspoon cinnamon
- 1/8 teaspoon freshly grated nutmeg
- 1/8 teaspoon cardamom
- 1 to 2 cups Almond Breeze almond milk (any flavor is fine, but I like the vanilla Almondmilk Coconutmilk)

Teriyaki Burgers with Mango Pineapple Salsa

I have to admit, I’m proud of myself
- For the salsa:
- 1 mango, diced
- 1-1 1/2 cups diced fresh pineapple
- 1/2 of one red bell pepper, diced small
- 1/4 cup red onion, finely diced
- 1 tbsp. minced fresh cilantro
- Juice of one lime
- Pinch of coarse salt
- For the sauce: (I halved it and had plenty for 4 burgers)
- 1 cup fresh chopped pineapple
- 1/2 cup low sodium soy sauce
- 1 inch knob of ginger, peeled and minced fine
- 3 tbsp. brown sugar
- 2 cloves garlic, minced
- 1/2 tsp. vinegar (apple cider or rice vinegar)
- 1/2 tsp. sesame oil
- 1 tbsp. cornstarch
- 1 tbsp. cold water
- For the burgers:
- 1 lb. ground sirloin
- 2 tbsp. finely chopped yellow onion
- 1 tsp. minced garlic
- 1 tsp. salt
- 1/2 tsp. freshly ground pepper
- 1 or 2 dashes of Worcestershire sauce
Easy Caramel Sauce

Mix the brown sugar, half-and-half, butter and salt in a saucepan over medium-low heat
- 1 packed cup brown sugar
- 1/2 cup half-and-half
- 4 tablespoons butter
- Pinch salt
- 1 tablespoon vanilla extract

- Pork Sausage:
- 1 teaspoon coriander seeds
- 1 teaspoon fennel seeds
- 1/2 teaspoon caraway seeds
- 2 teaspoons minced garlic
- 1 teaspoon dried ground sage leaves
- 1 teaspoon kosher salt
- 1 teaspoon fresh cracked black pepper
- 1/2 teaspoon red chile flakes
- 1 1/2 pounds ground pork
- 2 tablespoons maple syrup
- Blankets:
- 2 cups all-purpose flour, plus more for bench
- 1 tablespoon dark brown sugar
- 2 teaspoons baking powder

- 1 teaspoon cayenne pepper

- 1 cup shredded mozzarella cheese
- 3/4 cup buttermilk
- 1 egg, well beaten
- Chipotle Agave Mustard:
- 3 tablespoons amber agave
- 3 tablespoons Dijon mustard
- 3 tablespoons yellow mustard
- 1 1/2 tablespoons adobo sauce, from canned chipotles
- Pinch pepper
Whole Poached Salmon and Lemon

- 1 whole salmon 5 to 6 pounds
- 1 onion, chopped
- 2 bay leaves
- 4 tbsp white wine vinegar
- 1 lemon, quartered
- sea salt

Grilled Vegetable and Farro Salad

- Dressing:
- 2 yellow squash, washed and cut into length wise strips
- 2 zucchini, washed and cut into length wise strips
- 1-2 T. Extra Virgin Olive Oil
- 2-4 cobs corn
- 2 lbs Peruvian potatoes
- 1 cup artichoke heart pieces
- 3 cups cooked farro
- 18 year old balsamic vinegar
- Extra virgin olive oil
- 1 T. fennel
- 1 T. rosemary
- 1 T. oregano
- Salt & pepper
Herb Boursin Cheese Spread
