Shrimp Po' Bubba's

Lightly sprinkle the shrimp with salt and pepper
- Uncle Bubba's Fry Mix:
- 6 cups self-rising flour
- 1 cup cornmeal
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 pounds, uncooked shrimp, peeled (tails left on), deveined and butterflied
- Salt and freshly ground black pepper
- 3 eggs
- 1/4 cup water
- 1/2 cup Louisiana hot sauce (recommended: Texas Pete)
- 2 cups Uncle Bubba's Fry Mix, recipe follows
- Peanut oil, for deep frying
- Tartar sauce, for dressing
- Lettuce and tomato slices, for topping
- For Uncle Bubba's Fry Mix:
- Mix ingredients together and store in an airtight container for up to 4 months.
Hungarian Roasted Pepper and Paprika Chicken

This comfort food freezes easily so you can have it any night of the week!
- 2 red bell peppers
- 1 hot cherry or Fresno chili peppers
- 1 small onion, peeled and coarsely chopped
- 1/4 cup flat-leaf parsley, a small handful
- 2 cloves garlic, peeled
- 2 tablespoons fresh thyme leaves
- 1 cup chicken stock
- 6 tablespoons butter, divided
- 3 tablespoons flour
- 1 cup milk
- Salt and pepper
- 1/2 cup sour cream or heavy cream
- 3 tablespoons sweet paprika
- 2 tablespoons EVOO – Extra Virgin Olive Oil
- 6 pieces boneless skinless chicken breast or 12 pieces boneless, skinless chicken thighs
- 1/2 pound Gouda, shredded
- 1 pound extra-wide egg noodles
- 1 round tablespoon poppy seeds
- 1/4 cup chives, finely chopped

- 3/4 pound boneless skinless chicken breasts, cubed
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 medium onion, chopped
- 1 jalapeno pepper, seeded and chopped
- 2 teaspoons dried oregano
- 1 teaspoon ground cumin
- 2 tablespoons olive oil
- 4 garlic cloves, minced
- 2 cans (15 ounces each) white kidney or cannellini beans, rinsed and drained, divided
- 3 cups chicken broth, divided
- 1-1/2 cups (6 ounces) shredded cheddar cheese
- Sour cream and minced fresh cilantro, optional

- 2 11-ounce cans mandarin oranges, drained
