Crock Bean Soup with Kale

In a skillet, heat olive oil over medium-high heat
- 3 tablespoons olive oil
- 3 medium onions, chopped
- 1 medium carrot, chopped
- 3 cloves garlic, pressed
- 1 bunch kale, trimmed and sliced (or use 2 cups frozen greens)
- 1 pound cannellini beans, soaked overnight (you can also use white beans)
- 4 cups low sodium chicken broth (make your own or buy canned)
- 1/4 cup tomato sauce
- 1/4 teaspoon crushed red pepper flakes
- Salt and pepper, to taste

- 1 cup strawberries, chopped
- 1 cup sugar, plus 2 tablespoons

Butternut Squash and Red Onion Pizza

Position racks in the upper and lower thirds of the oven and preheat to 475 degrees F
- 1/3 butternut squash, peeled and cut into 1/2 inch cubes
- (about 1 1/4 cups)
- 1/4 cup EVOO
- Salt and pepper
- 1 clove garlic, finely chopped
- 2 T. chopped parsley
- 1/4 head radicchio, cored and cut into 1/2 inch strips.
