mushroom risotto

1. In a saucepan, warm the broth over low heat
- 6 cups chicken broth, divided
- 3 tablespoons olive oil, divided
- 1 pound portobello mushrooms, thinly sliced
- 1 pound white mushrooms, thinly sliced
- 2 shallots, diced
- 1 1/2 cups Arborio rice
- 1/2 cup dry white wine
- sea salt to taste
- freshly ground black pepper to taste
- 3 tablespoons finely chopped chives
- 4 tablespoons butter
- 1/3 cup freshly grated Parmesan cheese

- MARINADE:
- This marinade is what’s going to ‘make’ these tacos. It gives them the authentic ‘street’ taco flavor without adding globs of other things:
- Mix:
- 3-4 cups of orange juice (Enough to fully cover the meat in a freezer
- bag.
- 1 tablespoon of lime juice
- 1 tablespoon of ground cumin seed
- 1 tablespoon of minced garlic (Fresh is always best, but sometimes I use the stuff that comes in a jar)
- 1 tablespoon of finely chopped cilantro
- 1 teaspoon salt

mix pnut butter, soy sauce and vinegar until smooth
- 1/2 cup creamy peanut butter
- 1/2 cup reduced sodium soy sauce
- 1/4 cup rice vinegar
- 1/3 cup sugar
- 1/4 tsp red pepper sauce

Oven-Roasted Kale Chips

- 1 bunch kale (the curly-leaf variety works best for this recipe)
- 1/8 cup grapeseed oil
- 1 tablespoon apple cider vinegar or red wine vinegar

- 1 lemon
- 1/2 cup sugar
- 1/2 cup water
- 2 bottles white Catwaba grape juice
- 2 tbsp orange flavored liqueur or orange juice

- 6-8 taco shells
- 3 cups shredded lettuce

- 1 teaspoon cayenne pepper (cut in half if you prefer less spicy)
