Chocolate Brownie Cupcakes

Baking Temperature: The oven should be preheated to 325 1
- 1 stick butter, chopped
- 7.1 oz dark chocolate, chopped
- 1/2 cup brown sugar, firmly packed
- 2 eggs, lightly beaten,
- 1 1/4 cups plain flour, sifted
- 2 cups chocolate chips, see recipes below for other suggestions
- Alternatives: Instead of using 2 cups of chocolate chips I used 1 cup milk chocolate chips and 1 cup chopped walnuts pecans, almonds
- or 2 cups combination of Milk, Dark and White chocolate chips.
- press lightly into the chocolate brownie recipe batter.

- 1-16 ounce package frozen blueberries, thawed
- 1-16 ounce frozen sliced peaches, thawed
- 1 teaspoon ground cinnamon

- 1/4 cup Splenda

- 1/4 cup heavy cream
- 1/4 cup water

- 1 c pumpkin purée
- 1/2 c sugar
- 2 eggs + 1 egg for washing

Mix everything together
- 1 head romaine lettuce
- 1 head iceberg lettuce
- 1 (10 ounce) jar artichoke hearts, drained
- 1 (10 ounce) can hearts of palm, drained and chopped
- 1 (4 ounce) jar pimiento, diced and drained
- 1 large red onion, thinly sliced
- 1/2 cup Parmesan cheese
- salt and pepper
- shaved deli hard salami (optional,but wonderful)
- Dressing
- 1/2 cup olive oil
- 1/3 cup red wine vinegar
