Guacamole

Mix all together
- 4 ripe avocados, peeled and halved
- 1 small red onion, minced
- 1 ripe tomato, peeled, seeded and chopped
- 2 T. minced garlic
- juice of 1 lime
- 1 T. chpped fresh cilantro
- 1 tsp. salt
- dash of Tabasco
Chicken and Broccoli Ring

- Cook broccoli according to pkg. and drain.
- In 2 qt. casserole, combine soup sour cream and salt. Stir in rice, chicken and broccoli.
- Bake at 350 for 20-25 minutes.
- Sprinkle with onions and bake an additional 5-8 minutes.
- 2 cups cooked and chopped chicken
- 1 cup fresh broccoli, chopped
- 1/2 ½ cup red bell pepper
- 1 clove garlic, pressed or minced
- 4 ounces shredded cheddar cheese
- 1/2 ½ cup mayonnaise (not Miracle Whip)
- 2- 8 ounce packages of crescent rolls
Fruit Pizza

GLAZE: cook over medium heat until thick and clear, cool and then drizzle over fruit
- Crust:
- 1 tube sugar cookie dough-cut into slices (1/8 inch thick)
- Place on large pizza pan-seal edges. Bake at 350 for 10-15 minutes. Cool.
- FILLING: beat and spread on crust
- 12 oz. cream cheese
- 1/2 ½ C. sugar
- 1 tsp. vanilla
- Top with: strawberries, kiwi, pineapple, peaches, mandarin oranges, bananas.
Corn/Bean Salsa

- 1 can corn, drained
- 2 cans Chipotle corn (or Mexicorn if you can’t find Chipotle), drained
- or 2 cans regular corn and 1 can Chipotle/Mexicorn-your choice*
- 2 cans black beans-rinsed & drained
- 1 can petite diced tomatoes-DON’T drain
- 1 can Rotel
- Green onions-chopped
- 1/2 to 1 batch Cilantro-washed and chopped
- Fresh Jalapeno pepper-diced
- Approx. 1/2 bottle Zesty Italian Dressing
- Chili powder-to your liking
- Sprinkle or two of garlic powder
Layered Lettuce Salad

- Add chopped vegetables:
- I head lettuce, chopped—place in a 9x13 pan.
- celery
- carrots
- frozen peas
- onion
- boiled eggs.
- Mix 2 ½ C. mayo and 2 Tbl. sugar. Spread on lettuce.
Chili Seasoned Potato Wedges

In sealable bag, combine all dry ingredients
- 1 T. onion soup mix
- 1 T. chili powder
- 1/4 ¼ tsp. salt
- 1/4 ¼ tsp. garlic powder
- 1/4 ¼ tsp. pepper
- 4 large baking potatoes
- 2 T. oil
Oatmeal Fudge Squares

- 1 C. butter/margarine
- 2 C. packed light brown sugar
- 1 tsp baking soda
- 2 eggs
- 2 tsp. vanilla
- 2 1/2 2 ½ C. flour
- 3 C. quick cooking oats
- 1 1/2 1 ½ C. semi sweet chocolate chips
- 1 14 oz. can sweetened condensed milk
- 1/2 ½ C. chopped walnuts or pecans (optional)
- 2 tsp. vanilla
Jalapeno Jelly

- 4 C. peppers (combo of jalapeno, red/green peppers)
- we like heat, so use jalapeno solely
- leave in jalapeno seeds-to your liking for heat
- 1 C. apple cider vinegar
- 3 1/2 T. powdered pectin
- 5 C. white sugar
Potato Soup

- 5 lb. potatoes
- 2 qt. water
- 2 chicken bullion cubes
- 4-5 carrots
- celery
- onion
- 1 lb. bag mixed vegetables
- 2 cans cream of chicken soup
- 1 lb. velveeta
BBQ Meatballs

- Meatballs:
- 3 lb. ground beef (the leaner the better)
- 2 C. quick oats
- 2 eggs
- 1 C. chopped onion
- 1/2 tsp. garlic powder
- 2 tsp. salt
- 1/2 tsp. pepper
- 2 tsp. chili powder
- Sauce:
- 2 C. ketchup
- 1 1/2 C. brown sugar
- 2 T. liquid smoke
- 1/2 tsp. garlic powder
- 1/2 C. chopped onion
