In a medium pot, combine oil, chicken, onion, carrots, and celery
- 2 teaspoons olive oil
- 1/4 teaspoon poultry seasoning
- 1 cup cooked, cubed chicken
- 5 cups water
- 1/2 white onion, chopped
- 3 chicken bouillon cubes
- 3 carrots, scrubbed and sliced
- 1 cup cooked rice spaghetti, chilled
- 2 celery stalks, chopped
- Salt and pepper
Sweet and Spicy Pecans

Combine the above ingredients in the slow cooker
- 1 pound raw pecan halves
- 2 tablespoons honey
- 1 teaspoon chili powder
- 1/2 teaspoon salt (optional)

- Crust:
- 1 pre-baked, 9-inch pie shell (homemade or store-bought)
- Filling:
- 3 eggs
- 2 1/4 cups pecans
- 1 2/3 cups dark corn syrup
- 1 cup brown sugar
- 1/3 cup honey
- 6 tablespoons (3/4 stick) unsalted butter, melted
- 1 teaspoon vanilla extract

- 6 large tomatoes, skinned and quartered
- 1 large green bell pepper, sliced thin
- 1 large red bell pepper, sliced thin

- 3/4 cider vinegar
- 1-1/2 tsp celery salt
- 1-1/2 tsp mustard seed
- 1 tsp sugar
- 1/8 tsp red pepper or tabasco sauce
- 1/8 tsp black pepper

- 1/4 c water
- 1 large cucumber, sliced thin
