Preheat the oven to 350F In a large bowl, cream together butter, sugar, egg, and vanilla
- 1/2 cup butter, softened
- 2/3 cup light brown sugar, packed
- 1 large egg
- 1/2 tsp vanilla extract
- 3/4 cup all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp table salt
- 1 1/2 cups rolled oats
- 3/4 cup raisins
Split Pea and Ham Soup

Cook the bacon in a soup pot, until fat is rendered but not until bacon is crisp
- 4 slices of bacon, chopped
- 1 cup of chopped onion
- 1/4 cup of chopped celery
- 1 large carrot, scraped and chopped fine

- 1 pound package of dried green split peas, rinsed and sorted
- 1/2 teaspoon each of dried thyme and rosemary, crushed

- 1 meaty ham bone or 2 smoked ham hocks
- 2 cups of smoked ham, chopped small
- 1-1/2 teaspoons of kosher salt, or to taste
- 1/4 teaspoon of freshly ground black pepper, or to taste
- 1/2 teaspoon of Cajun seasoning (like Slap Ya Mama), or to taste
Louisiana Hot Crab Dip

Preheat oven to 325 degrees F
- 1/2 pound jumbo lump crabmeat, free of shells
- 1 (8 ounce) package cream cheese
- 1/2 cup mayonnaise
- 1/4 cup grated Parmesan
- 3 tbsp minced green onions (white and green parts)
- 2 large garlic cloves, minced
- 2 tsp Worcestershire sauce
- 2 tbsp fresh lemon juice
- 1 tsp hot sauce
- 1/2 tsp Old Bay seasoning
- Salt and pepper to taste

Preheat oven to 400 degrees
- 1 large sweet or red onion, thinly sliced into rings
- 1/2 cup gluten-free Panko, or whole grain bread crumbs (bread crumb recipe)
- 1/2 cup flour, optional gluten free flour
- 1/2 teaspoon baking power
- 1/4 teaspoon black pepper
- Kosher or sea salt to taste
- 1 egg white
- 3/4 cup low-fat milk or low-fat buttermilk

- CREAM CHEESE FROSTING:
- 3 sticks of salted butter softened
- 2 cups white sugar
- 4 eggs
- 1 teaspoon vanilla extract
- 2 teaspoons baking powder
- 5 cups of all purpose flour
- 1 stick softened butter (1/2 cup) Tips #1 and #2 apply
- 1 brick softened cream cheese (8 oz) Tip #2 applies
- Mix butter and and cream cheese until soft, add 2 tsp vanilla, beat until light and fluffy.
- Add 4-5 cups powder sugar, one cup at a time, (I use 4 1/2 cups). Beat until smooth. Add your favorite food coloring to tint it your desired color.

- Sauce:
- 5 boneless, skinless chicken breasts, cut into small cubes
- 2 chili peppers, de-seeded and chopped, optional

- 1 banana, (sliced)
- 1/2 pint blueberries
- 1 bunch grapes (I use the red ones)
- 1 -2 tablespoon sugar (optional)
