Chili Cheese Rice Casserole

This is a family recipe handed down 4 generations
- 1 cup rice
- 2 cups cheddar cheese grated
- 2 cups jack cheese grated
- 1 small can chopped Ortega chiles
- 1 stick butter
- 1 pint sour cream
- Note: save some of the grated cheese
Christmas Cranberry Salad

My Grandmother's recipe is a classic cranberry Jell-o salad that is sure to bring some holiday cheer to any feast
- 2 cups raw cranberries
- 1 orange
- 2 teaspoons lemon juice
- 1 small package cherry Jello
- 1 cup boiling water
- 1/2 cup each chopped celery and nuts
Sourdough Starter

I made sourdough pancakes this morning, yummy
- 1 cup whole rye (pumpernickel) or whole wheat flour
- 1/2 cup cool water
- To feed your starter
- a scant 1 cup King Arthur Unbleached All-Purpose Flour
- 1/2 cup cool water (if your house is warm), or lukewarm water (if your house is cool)
- note: best to use bottled water
Pecan Pie

- 1 cup sugar
- 1 cup Karo dark syrup
- 1 tsp vanilla
- 1/8 to 1/4 tsp salt
- 3 eggs beaten
- 3 Tbsp melted butter1 cup pecans

- Dough
- 1/2 cup sourdough starter, fed or unfed
- 3 cups all purpose flour (I only use King Arthur)
- 2 1/2 teaspoons instant yeast
- 1 tablespoon sugar
- 1 1/4 teaspoons salt
- 1 large egg
- 5 tablespoons soft butter
- 2/3 cup lukewarm warm
- Topping
- 4 tablespoons melted butter, divided
- 1/4 teaspoon paprika (optional)

- In saucepan heat:
- 1 1/2-2 lbs browned hamburger with one chopped onion
- 1 10oz can Los Palmas enchilada sauce
- 1 can cream of chicken soup
- 1 can cream of mushroom soup
- 1 cup milk
- Have ready: 2 cups or more grated cheese
- 1 pkg corn tortillas
- 1 cup black olives
