Simple Whole Roasted Chicken

In a bowl, mix the salt, sugar, cloves, allspice, nutmeg, and cinnamon
- 2 teaspoons salt
- 1 teaspoon white sugar
- 1/8 teaspoon ground cloves
- 1/8 teaspoon ground allspice
- 1/8 teaspoon ground nutmeg
- 1/8 teaspoon ground cinnamon
- 1 (4 pound) whole chicken
- 5 cloves garlic, crushed

Note: I sometimes use a 9 x 13 pan
- 3/4 cup and 1 tablespoon fresh squeezed lemon juice
- 3 cups all-purpose flour, plus flour for dusting pan
- 3/4 cup and 2 tablespoons milk
- 2 sticks melted butter
- 2 cups sugar
- 4 large eggs
- 1/2 tablespoons baking powder
- 1/2 tablespoons baking soda
- Heaping 1/4 tablespoon salt
- 1/2 cup walnuts (optional)
- Add 1 tablespoon lemon extract to wet ingredients for more intense lemon flavor
Amish Dinner Rolls

Soak yeast in warm water, then mix everything together and mix well
- 5 eggs
- 1 cup sugar
- 1 T salt
- 3/4 cup lard
- 2 cups mashed potatoes
- 1 pint warm water
