Sauce: Barbecue

This is the only sauce I use for my barbecue, I also add 1/4 cup of Kentucky bourbon on Derby Day!
- 1 slice bacon
- 1 bunch of thyme
- Olive Oil
- 1/2 onion, chopped
- 2 garlic cloves, chopped
- 2 cups ketsup
- 1/4 cup brown sugar
- 1/4 cup molasses
- 2 tablespoons red wine vinegar or white wine vinegar
- 1 tablespoon dry mustard
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
Appetizer: Baked Fontina

Put in a small 8" cast iron skillet, heat in broiler for about 6 minutes
- 1 1/2 lb fontina cheese, diced
- 6 cloves of garlic
- 1 tablespoon fresh thyme
- 1 teaspoon rosemary
- 1 teaspoon salt
- 1 teaspoon pepper
Chicken: Drumsticks Provencale

Drumsticks are so easy to roast unlike a whole chicken and the flavor is incredible
- 4 to 6 drumsticks
- olive oil
- kosher salt and fresh ground pepper
- 2 to 3 tablespoons butter
- 2 or 3 lemons sliced thin
- 3 to 4 chopped garlic
- Provencale dried spices
- 2 to 3 Sprigs fresh rosemary minced
- 4 to 6 sprigs fresh thyme minced
- 3 tablespoons dry white wine or vermouth
- 1 fennel bulb chopped
- 3 carrots chopped
- 1 large onion chopped
- 3 or 4 potatoes chopped (optional)
Brownies: Ultimate

Preheat oven 350* or 325* for glass or dark metal pan
- 8 oz. of unsweetened chocolate
- 1 cup butter
- 5 eggs
- 3 cups sugar
- 1 tablespoon vanilla
- 1 1/2 cups flour
- 2 1/2 cups chopped pecans or walnuts...lightly toasted
Appetizer: Soprasata in Pastry

Preheat 450* Roll out puff pastry until thin and place on lined cookie sheet
- 2 sheets puff pastry
- 2 tablespoons dijon mustard
- 12 slices soprasata salami
- 6 oz shredded gruyere cheese
- egg wash
Sauce: Basting for Carolina Pulled Pork Sandwiches

Combine basting sauce ingredients, whisking until sugar and salt is disolved, set aside
- 1 cup cider vinegar
- 1 small onion, minced
- 1 teaspoon chili flakes
- 1 teaspoon salt
- 1 tablespoon brown sugar
- 1 teaspoon black pepper
Cocktail: The Hemmingway

Shake over ice and garnish with dried cherries soaked in marichino liquor for 24 hours
- 1 1/2 oz simple syrup: equal parts sugar and water boiled and cooled.
- 1 1/2 oz fresh squeezed lime juice
- 1 oz fresh white grapefruit juice
- 1/2 oz cherry flavored marochino liquor
- 1/2 oz aged rum
- 2 oz white rum
Oil Infusion: Garlic

Put garlic and oil in a pan bringing oil to a boil, then turn down heat to simmer for 10 minutes
- 12 cloves peeled whole garlic
- 2 cups extra virgin olive oil
- lemon peel of 2 lemons
- red pepper flakes
- salt
Noodle Kugel

If I let him, my husband would eat the entire casserole
- 1 pound wide egg noodles
- 5 extra large eggs
- 4 cups half and half
- 1/4 cup light brown sugar, packed
- 2 teaspoons vanilla extract
- 1/2 teaspoons cinnamon
- 1 1/2 tablespoons salt
- 1/2 teaspoons pepper
- 1 cup ricotta cheese
- 1 cup golden raisins
Pasta: Eggplant

In a large pot, olive oil and butter, add onions and eggplant, let cook down for 15 minutes
- 1 dice onion
- olive oil
- 5 cups eggplant
- butter
- 3 whole cloves of garlic
- 7 basil leaves
- 12 roma tomatoes blanched and peeled and cored and squeezed preserve the liquid preserve the meat of the tomato
- fresh mozzarella chopped
- packaged mozzarella chopped
- 1 1/2 lb pasta cooked 8 minutes.
