Kale Gratin

This has become one of the best green bean casserole substitutes for Thanksgiving ever
- 5 cups heavy cream
- 2 tsp corn starch mixed with 2 tbs water
- 1/2 tsp nutmeg
- 2 pounds kale leaves chopped
- 4 oz chopped pancetta
- 1 cup chopped onion
- 2 cups parmesan cheese
- 1 cup pancko bread crumbs
- olive oil
- 1/2 cup of shredded gruyere cheese (optional)

Demo : I am going to try this without the German sweet chocolate and use Dark chocolate or perhaps semisweet
- 1/2 cup water
- 6 oz. Baker German's Sweet Chocolate, chopped
- 2 1/4 cups all purpose flour

- 1/4 cup semisweet chocolate chips
Chicken: A better way to Roast

This is the best way to roast a chicken in my opinion
- 1 5/6 1 5/6 5/6 lb. roast chicken
- 1 1 1 whole lemon quartered
- 1 1 1 bunch of thyme
- 7 to 8 7 to 8 8 whole cloves of garlic
- kosher salt
- fresh ground pepper
- 2 2 2 large onions

Preheat the oven 350* Cream the butter and both sugars until light and fluffy
- 2 sticks soft butter
- 1 1/2 cups brown sugar
- 3/4 cup sugar
- 2 extra large eggs room temp
- 2 teaspoons vanilla
- 1 cup peanut butter
- 2 1/2 cups flour
- 1 teaspoon baking powder
- 1 pound semisweet chocolate chunks
Eggplant Spread

Preheat oven to 400* Cut the eggplant, bell pepper, and onion itno 1" cubes
- 1 medium eggplant, peeled
- 2 red bell peppers, seeded
- 1 red onion, peeled
- 2 garlic cloves, minced
- 3 tablespoons good olive oil
- 1 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 tablespoon tomato paste

Preheat oven to 350* Place the pecans on a sheet pan and bake 5 minutes, until crisp
- 1 1/2 cups pecans
- 2 sticks butter, room temp
- 1 cup dark brown sugar, lightly packed
- 1 cup sugar
- 2 extra large eggs, room temp
- 2 teaspoons vanilla
- 1 1/2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 3 cups old fashioned oats
- 1 1/2 cups golden raisins
Hummus

- 4 cloves garlic
- 2 cups or 1 can chick peas liquid preserved
- 1/3 cup tahini
- 2 lemons juiced
- 1 1/2 tsp salt
- 8 dashes of tobassco

There is nothing like a good old fashioned brownie and this is it
- 2 sticks soft and unsalted butter
- 2 1/4 cups sugar
- 1 1/4 cups Dutch-process cocoa powder
- 1 teaspoon baking powder
- 1 teaspoon instant coffee
- 1 tablespoon vanilla extract
- 4 large eggs
- 1 1/2 cups King Arthur Unbleached Flour
- 2 cups chocolate chips (12 oz bag)

- 4 cups all purpose flour
- 2 tablespoons baking powder
- 4 teaspoons sugar
- 1 teaspoon salt
- 1 1/2 sticks cold butter cut into 1/2" pieces (or put butter in freezer for about 10 minutes, then using a grater, grate the butter straight into the large bowl of sifted flour.)
- 2 cups chilled whipping cream
