- 1 15- to 16-ounce can garbanzo beans (chickpeas), rinsed and drained
- 1/4 cup tahini (sesame seed paste)
- 3 tablespoons water
- 2 tablespoons lemon juice
- 1 tablespoon extra-virgin olive oil
- 1 clove garlic, halved
- 1/2 teaspoon kosher salt
- 1/2 teaspoon cumin seeds, toasted and ground,* or 1/2 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper
- 1 tablespoon chopped fresh flat-leaf parsley
- Lemon juice (optional)
- Fresh flat-leaf parsley
Tandoori Chicken Marinade

If you allow yogurt, this is a great marinade for chicken
- Ingredients:
- Tub of Greek yogurt (FAGE is a good option)
- 4 large cloves garlic, crushed and chopped
- 1 inch piece fresh ginger, grated
- 2 spicy peppers, minced
- Juice from one lemon
- 1 tbsp turmeric
- 1 tbsp cumin
- 1 tbsp coriander
- 1 tsp cinnamon
- 2 tsp paprika
- Sea salt and black pepper
Cranberry Spinach Salad

In a medium saucepan, melt butter over medium heat
- 1-1/2 teaspoons butter
- 1/4 cup and 2 tablespoons
- almonds, blanched and slivered
- 1/2 pound spinach, rinsed and
- torn into bite-size pieces
- 1/2 cup dried cranberries
- 1 tablespoon sesame seeds
- 1/4 cup white sugar
- 1 teaspoon minced onion
- 1/8 teaspoon paprika
- 2 tablespoons white or red wine vinegar
- 2 tablespoons cider vinegar
- 1/4 cup vegetable oil
- Note: I used a small pkg of Sunkist Almond Accents Original Oven Roasted Flavored Sliced Almonds instead of the butter and almonds listed above, add red onions and strawberries too.

IN A BOWL, COMBINE FIRST SEVEN INGREDIENTS, MIX WELL
- INGREDIENTS: 1 PKG CHOCOLATE CAKE MIX (18-1/4 OZ) Box chocolate cake mix
- 1 CUP ALL PURPOSE FLOUR
- ½ CUP MELTED MARGARINE
- ¼ CUP CHOCOLATE SYRUP
- 2 EGGS
- 1 TSP VANILLA EXTRACT
- ½ TSP ALMOND EXTRACT
- ½ CUP SILVERED ALMONDS
- ½ CUP MINATURE SEMISWEET CHOCOLATE CHIPS

In a large pot over high heat, boil water and prepare pasta shells as directed on package
- 12-16 jumbo pasta shells
- water for boiling pasta
- 4 oz cream cheese, softened
- 1 1/4 cup freshly grated Parmesan or Asiago cheese +
- 3 tablespoons prepared pesto (homemade or store bought)
- 2 cups shredded cooked chicken
- 2 cloves garlic, minced salt and pepper to taste
