Swirly Dogs from your Bread Machine

Think 'corn dogs meet pigs in blanket' with this recipe that wraps hot dogs in a bread dough with cornbread mix
- DOUGH:
- 1/2 cup milk
- 1 large egg
- 1 box Jiffy Cornbread Mix
- 1 1/4 cup unbleached flour
- 1 1/2 teaspoon bread-machine yeast
- GLAZE:
- 1 large egg
- 1 tablespoon water
- 1 package hot dogs
Chicken with Tamarind, Apricots and Chipotle Sauce

TO PREPARE Thoroughly rinse chicken pieces with cold water and pat dry
- CHICKEN WITH TAMARIND, APRICOTS AND CHIPOTLE SAUCE
- Pollo con Salsa de Tamarindo, Chabacano y Chipotle
- Serves 8
- INGREDIENTS
- 4 chicken quarters, or 8 chicken pieces of your choice with skin and bones
- 1 tsp kosher or sea salt, or to taste
- 1/2 tsp freshly ground black pepper, or to taste
- 1/2 cup vegetable oil
- 4 cups water
- 1/2 lb, about 3/4 cup, dried apricots, roughly chopped
- 2 tbsp apricot preserve
- 3/4 cup tamarind concentrate, store bought or homemade (recipe follows)
- 2 tbsp sauce from chipotles in adobo, or more to taste

- on 12/01/10This is really two recipes in one, as we've also included Open-Face Sausage, 3 Pepper and Onion Sandwiches with Provolone! You'll see that it makes sense to prepare them on the same day.
- 1 box chopped frozen organic spinach (10 ounces)
- Salt and freshly ground black pepper
- Freshly grated nutmeg
- 2 hard boiled eggs, peeled and finely chopped
- 2 tablespoons dried currants or chopped raisins
- 2-3 tablespoons pine nuts, toasted
- 2 large cloves garlic, finely chopped
- 1/4 cup Parmigiano Reggiano cheese, freshly shredded
- 4 pieces thin-cut top round veal or beef, pounded very thin (8 ounces each)
- 2 tablespoons extra virgin olive oil (EVOO)
- Note: you will need kitchen twine to prepare the Braciole.
- For the Sunday Sauce:
- 2 tablespoons extra virgin olive oil (EVOO), divided
- 1 carrot, finely chopped
- 1 onion, finely chopped
- 4 cloves garlic, thinly sliced
- 1 large fresh bay leaf
- A few sprigs fresh rosemary, leaves removed and finely chopped
- A few sprigs fresh sage, thinly sliced
- 1/4 cup tomato paste
- 1 cup dry white wine
- 2 cups chicken stock
- 1 large can San Marzano tomatoes (28 ounces)
- 2 pounds hot or sweet Italian sausage or a combination of both
- 1 package pappardelle pasta (8 ounces) or egg tagliatelle (12 ounces)
- 1 tablespoon butter
- A generous handful of fresh sweet basil leaves, torn or shredded
- A small handful of flat leaf parsley, finely chopped
- For the Open-Face Sausage, 3 Pepper and Onion Sandwiches with Provolone
- 1 large loaf ciabatta bread
- 2 tablespoons extra virgin olive oil (EVOO)
- 4 portabella mushroom caps
- 1 onion, halved and sliced
- 2 cubanelle peppers, seeded and sliced
- 1 red chili pepper, thinly sliced
- 2 large cloves garlic, sliced
- 1/2 cup chicken stock or water
- Salt and freshly ground black pepper
- 1 pound Italian hot or sweet sausage or a combination of both sausages in Sunday Sauce (use the sausage included in the Stuffed Braciole recipe, above)
- 12 ounces sharp provolone cheese, shredded
- A small handful of flat leaf parsley, for garnish

- 1 box Betty Crocker® SuperMoist® carrot cake mix
- 1/2 cup orange juice or water
- 1/2 cup vegetable oil
- 1 can (8 oz) crushed pineapple in juice, undrained
- 1 teaspoon orange peel
- 1 teaspoon vanilla
- 4 eggs
- 1/2 cup chopped nuts
- 1/2 cup coconut

- 1.5 pints strawberries, sliced

- 1/4 cup white sugar
- 2 Tbs arrowroot powder or cornstarch
Beer Braised Irish Stew and Colcannon

- Irish Stew:
- 1 1 1 tablespoon vegetable oil
- 1 1 1/2-inch 1 (3 pound) beef chuck roast, trimmed of fat and cut into 1/2-inch cubes
- 2 2 2 tablespoons all-purpose flour
- 1 1 1 cup coarsely chopped onion
- 1 1 1 cup coarsely chopped carrot
- 1 1 fluid ounce) can 1 (12 fluid ounce) can or bottle dark beer
- 2 2 2 bay leaves
- 1 1 1 teaspoon dried thyme
- 1 1 1 teaspoon salt
- 1/2 1/2 1/2 teaspoon ground black pepper
- 2 2 2 cloves garlic, minced
- 2 2 2 tablespoons Worcestershire sauce
- Calcannon:
- 3 3 3 slices bacon
- 2 2 2 pounds russet potatoes, peeled and cut into chunks
- 2 2 2 cups thinly sliced cabbage
- 1/4 1/4 1/4 cup milk, warmed
- 2 2 2 tablespoons butter
- 1/2 1/2 1/2 teaspoon salt
- 1/4 1/4 1/4 teaspoon ground black pepper
- 2 2 2 tablespoons minced fresh parsley
- Directions
- 1 1.Preheat to 325 to 325 degrees F (165 degrees C).
- 3 3.Place 45 45 Dutch oven into the preheated oven, and cook for 45 minutes; uncover, stir the stew, and cook until the beef is very tender and the liquid is reduced by half, about 45 more minutes.
- 4 4.Place 10 the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate. Crumble the bacon and set aside.
- 7 7.Place 1/2 1/4 potatoes into a large bowl, and add milk, butter, 1/2 teaspoon of salt, and 1/4 teaspoon of pepper. Beat the potatoes with an electric mixer until smooth and creamy. Stir in the cabbage, crumbled bacon, and parsley until well combined.
- 8 8.To 8.To serve, place a scoop of colcannon onto a plate, make a hollow, and fill with braised beef stew.
Herb-rubbed Stuffed Chicken Breast with Rice, Cheddar, and Mushrooms

- 2 oz. cream cheese, softened
- 1 cup cheddar cheese, shredded
