- For the suet crust
- 225 g/8oz self-raising flour, plus extra for dusting
- 100 g/3 1/2oz shredded suet
- 75 ml/2 1/2fl oz milk
- For the filling
- 3 Cox’s apples
- 150 g/5 1/2oz butter, cut into cubes, plus extra for greasing
- 175 g/6oz light muscovado sugar
- 1 large lemon
- To serve
- cream or custard

- 2 cups white sugar
- 2 eggs
- 2 cups all-purpose flour
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup raisins
- 1/2 cup (1 stick) butter
- 1 cup confectioners' sugar
- In a medium saucepan over low heat, melt butter. Cook 6 to 8 minutes, or until butter is lightly browned. Whisk in confectioners' sugar until smooth.
