Perfect INSTANT Pancake Mix

Beats the pants off old "Aunt Jamima" and WAY cheaper! Create the mix in advance and you can just add water OR add
- 4 1/2 Cups all purpose flour
- 3/4 Cup of nonfat dry milk
- 1 Cup granulated sugar (any place from 1/3 to 1 cup...I prefer the higher amount)
- 2 TBS baking powder
- 1 TBS baking soda
- 1 1/2 tsp salt
- ----After mixing store in airtight container.----
- TO MAKE:
- 1 Cup of mix (will make 4-5 decent size pancakes)
- 2 Cap fulls of Vanilla Extract
- 1 Cap full of Almond Extract
- 3/4 cup (or to desired consistency) water

- 1/2 Cup Mayo
- 1/2 Cup Sour Cream
- 1/2 Cup Butter Mink
- 1/4 tsp Salt
- 1/8 tsp Pepper
- 1/4 tsp Garlic Powder
- 1 1/2 Tsp Apple Cider Vinegar
- 2-4 oz Blue Cheese Crumbles plus some to sprinkle on salad

- FOR THE SALAD;
- 1 cup cooked dried white quinoa
- 2 cups defrosted frozen edame
- 2 cups shredded cabbage (1/2 a head)
- 2 cups shredded carrots
- 1 cup curly kale (stems removed and massaged)
- 1 cup diced cucumber
- FOR THE DRESSING;
- 1/4 cup evoo
- 1 TBS sesame oil
- 1 TBS lime juice (1/2 lime +/-)
- 1TBS fresh ginger (more to taste)
- 3 TBS low sodium soy sauce
- 2 TBS water
- 3 TBS honey
- 2 TBS white vinegar
Air Fryer Cabbage Crust Pizza

- 1 Head green cabbage
- BASIC INGREDIENTS:
- 1/4 Cup EVOO
- 1/4 Cup Grated parmesan
- 1/2 tsp Garlic powder
- 1/2 tsp Onion powder
- 1/2 tsp Paprika
- 1/2 tsp Chili powder
- 1/2 tsp Italian seasoning
- Salt and Pepper to taste

Easy Tasty Fig Jam

Water, sugar, lemon juice and FIGS are all it takes to make delicious fig jam in about an hour!
- 3/4 Cup of water
- 3/4 Cup white sugar
- 1 Small lemon
- 2 Cups fresh figs (rinsed, stemmed, cut in 1/2)
- MAKES APPROXIMATELY 2 CUPS OF JAM or 8 TWO TBS SERVINGS
NO PEALING Smoked Tomato Pasta Sauce/Pizza

Smoked tomatoes and herbs make an easy and delicious sauce which can be used as pasta or pizza sauce OR as a base f
- 2/3 of a 10x14 foil pan of tomatoes (any variety will work I just use whater I have in the garden...usually its a mixture of enough to give me the volume I need; cut to sorta consistent sizes)
- 1 Small handful of fresh basil leaves
- 2 medium onions (large diced)
- 2 Medium/Large carrots (large sliced/diced)
- 1 Stem Fresh Rosemary (leaves removed from stem)
- 2 Stems Fresh Thyme (leave on stem, it can be removed before final step)
- 1/2 Bulb of Garlic (10-12 cloves)
- 2 TBS Italian Seaoning
- Fruit woods/pellets or one of the "master blends" that use lesser amounts of strong (hickory etc) woods
