Oven Toasted Ravioli

Preheat oven to 375 degrees
- 12 round frozen ravioli, thawed
- 1 egg
- 1 Tbsp milk
- 6 Tbps Italian bread crumbs

Dutch Oven Stromboli

Very good for small patrol, this is a quick meal that is a big hit on campouts
- 1 pack of pepperoni, and/or 1 package of sandwich ham, and/or pre-cooked Italian Sausage. Cut ham and sausage into bite-sized pieces.
- 2 packages of Pillsbury pizza dough
- 1 jar Ragu (or similar) spaghetti sauce
- 1 large package shredded mozzarella cheese
Tofu Bites

Place tofu on several layers of heavy-duty paper towels
- 1 pound extrafirm reduced-fat water-packed tofu, drained and cut into 1/2-inch cubes
- 1 1/2 teaspoons vegetable oil
- 1 teaspoon dark sesame oil
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon rice vinegar
Raspberry-Pear Sorbet

1. For simple syrup, in a small saucepan bring 1 cup water and the sugar to boiling, stirring to dissolve sugar
- 1/2 cup sugar
- 1 pint fresh raspberries
- 1 medium pear, peeled, cored, and cut up
- 1/3 cup lime juice
- 1 tablespoon pear liqueur or vodka (optional)
- 1/8 teaspoon salt

Barley-Beef Soup

1. In a Dutch oven brown meat in hot oil
- 12 ounces beef or lamb stew meat, cut into 1-inch cubes
- 1 tablespoon cooking oil
- 4 ounces cans beef broth
- 1 cup chopped onion (1 large)
- 1/2 cup chopped celery (1 stalk)
- 1 teaspoon dried oregano or basil, crushed
- 1/4 teaspoon black pepper
- 2 cloves garlic, minced
- 1 bay leaf
- 1 cup frozen mixed vegetables
- 1 14 1/2 ounce can diced tomatoes, undrained
- 1 cup 1/2-inch slices peeled parsnip, or 1/2-inch cubes peeled potato
- 2/3 cup quick-cooking barley
S'mores Brownie Bars

- 9 whole graham crackers
- 1 (20 ounce) package fudge brownie mix (one that says bake in 13x9 pan)

- Two 5-oz. raw boneless skinless lean chicken breast cutlets, pounded to 1/2-inch thickness
- 1/8 tsp. salt
- 1/8 tsp. black pepper
- 1/8 tsp. garlic powder
- 2 wedges The Laughing Cow Light Creamy Swiss cheese, room temperature
- 1/3 cup jarred roasted red peppers, drained and sliced
- 6 large leaves fresh basil, or more for garnish
- 1/2 cup creamy tomato soup with 4g fat or less per serving (like Amy's Chunky Tomato Bisque)
- 1/4 cup fat-free sour cream
