Nyc Irish Soda Bread

Irish Soda Bread
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 2 tablespoons brown sugar
- 1/4 teaspoon salt
- 3 tablespoons butter
- 1 beaten egg
- 3/4 cup buttermilk
- 1 beaten egg (with another in a separate cup)
- 1/2 cup raisins
Light & Tasty Artichoke Crostini

This appetizer is wonderful when vine-ripened tomatoes are in season
- 1 sourdough baguette
- 2 cups tomatoes, seeded and chopped
- 1 (14 ounce) can water-packed artichoke hearts, rinsed drained and chopped
- 2 tablespoons minced fresh basil
- 2 tablespoons olive oil
- 1/2 teaspoon seasoning salt
- 1/8 teaspoon pepper
Carnitas (Little Meats) Recipe

1. Place the lard in a heavy, deep pot, over medium-low heat
- 3 lbs.lard(no substitute)
- 3 1/2 lbs. boneless pork butt(butt or shoulder), trimmed and cut into 3-inch cubes
- Salt
- 1 small orange, sliced
- 1/4 cup coarsely chopped cilantro(optional)
- Warmed flour tortillas
- Garnishes: As a main dish, serve with salsa, sour cream, chopped onion, cilantro, jalapeno slices
Ham Balls

Ham and ground beef are combined with cracker crumbs and formed into balls
- •1 to 1 1/2 sleeves of Ritz crackers
- •2 lbs ground ham
- •2 lbs ground beef
- •2 eggs, beaten
- •1/2 cup milk
- •Salt and pepper to taste
- •2 cans condensed tomato soup
- •1 1/2 cups white distilled vinegar
- •2 tbls prepared yellow mustard
- •3/4 cup packed brown sugar
Maple Baked Ham

Preheat oven to 325°. Place ham on a rack in a shallow roasting pan
- 1 fully cooked ham, bone-in, about 7 to 8 pounds
- 1 cup pure maple syrup
- 2 tablespoons all-purpose flour
- 1 1/2 teaspoons prepared mustard
- 1 cup water
- 2 teaspoons Worcestershire sauce
Mini Caprese Salad

- 1 lemon, juiced
- 1 small clove garlic, grated or minced
- 1 cup basil leaves, about 20 leaves, plus a few for garnish
- 1/3 cup extra-virgin olive oil
- 1 pint heirloom cherry tomatoes, multi colored if available, halved
- 1 cup bocconcini (bite-sized fresh mozzarella balls), drained, halved
- Salt and freshly ground black pepper
Pico De Gallo Salsa

Combine all ingredients and mix well
- 5-6 Roma tomatoes, chopped
- 1 small onion, chopped
- 1/2 cup fresh cilantro, chopped
- 2 serrano or jalepeno chiles, seeded and minced
- 2 Tbl freshly squeezed lime juice
- salt & pepper to taste
Penne al la Vodka

Heat a large skillet over moderate heat
- 1 tbsp extra virgin olive oil, once around the pan in a slow stream
- 1 tbsp butter
- 2 cloves garlic, minced
- 2 shallots, minced
- 1 cup vodka
- 1 cup chicken stock
- 1 32 oz can crushed tomatoes
- Coarse salt and pepper
- 16 oz pasta, such as penne rigate
- 1/2 cup heavy cream
- 20 leaves fresh basil, shredded or torn
- Crusty bread, for passing
