Southwestern Pasta Salad

1. Cook pasta as directed on package, adding corn during last 2 minutes of cook time
- 2 cups uncooked rotini pasta (8 oz.)
- 1 cup frozen sweet corn
- 1 (16 ounce) jar medium garlic-cilantro salsa (I use Muir Glen organic)
- 1/4 cup olive oil
- 3 tablespoons lime juice
- 1/2 teaspoon coarse salt (kosher or sea)
- 1/4 cup chopped fresh cilantro
- 1 medium red bell pepper, chopped (1 cup)
- 1 (15 ounce) can black beans, drained, rinsed
- 1 (2 1/4 ounce) can sliced ripe olives, drained

Easy Mexican Casserole

1 .Preheat oven to 350 degrees F (175 degrees C)
- 1 pound lean ground beef
- 2 cups salsa
- 1 (16 ounce) can chili beans, drained
- 3 cups tortilla chips, crushed
- 2 cups sour cream
- 1 (2 ounce) can sliced black olives, drained
- 1/2 cup chopped green onion
- 1/2 cup chopped fresh tomato
- 2 cups shredded Cheddar cheese

Combine cabbage, pineapple chunks, carrot, and almonds in a large bowl, and toss gently
- 2 cups shredded cabbage
- 1 (15 1/2-ounce) can pineapple chunks, drained
- 1 cup shredded carrot
- 1/3 cup slivered almonds, toasted
- 2/3 cup mayonnaise
- 2/3 cup sour cream
- 1 tablespoon fresh lemon juice
- 1 teaspoon granulated sugar

Best Chicken Noodle Soup

Combine the first four ingredients; rub over chickens
- NOODLES:
- 1 tablespoon dried rosemary, crushed
- 2 teaspoons garlic powder
- 2 teaspoons pepper
- 2 teaspoons seasoned salt
- 2 broiler/fryer chickens (3 to 3-1/2 pounds each)
- 5 cups Progresso ® Chicken Broth
- 2-1/4 cups sliced fresh mushrooms
- 1/2 cup chopped celery
- 1/2 cup sliced carrots
- 1/2 cup chopped onion
- 1/4 teaspoon pepper
- 2-1/4 cups all-purpose flour
- 1 teaspoon salt
- 2 eggs
- 1 can (5 ounces) evaporated milk
- 1 tablespoon olive oil
Tator Tot Casserole
