Creamy Potato and Ham Soup

Recipe suggested by Mark Anderson
- 2 tablespoons olive oil
- ½ medium onion, chopped
- 2 stalks celery, chopped
- 1 carrot, sliced in thin rounds
- 3 cups Red or Yellow potatoes, skin-on, cut into large bite-sized chunks
- ½ lb smoked ham (not sliced), cut into ½ inch cubes (bite-sized chunks)
- 2 cloves garlic, minced (or 2 teaspoons prepared minced garlic)
- ½ teaspoon onion powder
- 2 teaspoons dried parsley
- 3 cups low-sodium chicken broth
- 3 tablespoons butter
- 3 tablespoons flour
- 1 cup milk
- Salt and pepper
Applesauce Muffins

- 1 cup and 3 tablespoons applesauce
- 2 tablespoons milk
- 2 teaspoons vanilla
- 2 teaspoons vinegar
- 1 cup flour
- 1/4 cup sugar
- 1/2 teaspoons salt
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon cinnamon
White Bean Deep Dish Cookie Pie

- 2 cans white beans, drained and rinsed
- 1 cup quick oats
- 1/4 cup applesauce
- 1/4 cup peanut butter (or 3 tablespoons oil)
- 2 teaspoons vanilla
- 1/2 teaspoon baking soda
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 1/2 cups brown sugar
- 1 cup chocolate chips
Pasta, Tomatoes, Veggie Broth, Olive Oil, and Seasonings

Throw it all in the pot, INCLUDING the uncooked Pasta, and cook! - Bring it to a boil, then reduce to a simmer
- 12 ounces pasta (I used Linguine)
- 1 can (15 ounces) diced tomatoes with liquid ( I used zesty red pepper flavor)
- 1 large sweet onion, cut in julienne strips
- 4 cloves garlic, thinly sliced
- 1/2 teaspoon red pepper flakes
- 2 teaspoons dried oregano leaves
- 2 large sprigs basil, chopped
- 4 1/2 cups vegetable broth (regular broth and NOT low sodium)
- 2 tablespoons extra virgin olive oil
- Parmesan cheese for garnish

- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2/3 cup butter
- 1/2 cup sugar
- 1/2 cup firmly packed brown sugar
- 1 egg
- 1 teaspoon vanilla
- 3/4 cup chopped pecans
CINNAMON CRESCENT ROLLS

Heat oven to 350°F. In small bowl, combine butter, sugar and cinnamon; beat until smooth
- Rolls:
- 2 cans refrigerated crescent rolls
- 1 stick butter, softened
- 1/2 cup white or brown sugar
- 1 tablespoon cinnamon
- Glaze:
- 1/2 cup powdered sugar
- 1 teaspoon vanilla
- 2 tablespoons milk

In a small bowl, whisk together flour, cocoa, baking powder, baking soda and salt; set aside
- 1 1/4 cups flour
- 4 teaspoons unsweetened cocoa powder
- 1/4 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup sugar
- 1 egg
- 3/4 cup vegetable oil
- 1 tablespoon red food coloring
- 1/2 teaspoon vanilla
- 1/2 cup buttermilk
- 1/2 teaspoon white vinegar
Wild Rice Casserole

This dish smells as good during preparation as it tastes when it's done!
- 1 stick butter
- 1 medium onion, chopped
- 3 ribs diced celery
- 1 can cream of mushroom soup
- 1 small can diced mushrooms, drained
- 1/2 pound Velveeta cheese
- 1 box Uncle Ben's Wild and Long Grain Rice (don't use seasoning packet included)

- Cake:
- 2 cups flour
- 2 cups sugar
- 2 teaspoons baking powder
- 1 teaspoon soda
- 4 eggs
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon cloves (optional)
- 1 cup oil
- 15 ounces canned pumpkin
- Icing:
- 2 cups powdered sugar
- 1 teaspoon vanilla
- 1/2 cup margarine
- 1 teaspoon milk
- 3 ounces cream cheese
