Apple Cheesy Bake

A great side dish that Susan Hopper served us a couple of times
- 1 stick softened butter
- 1 cup sugar
- 1 8-ounce package grated Velveeta
- 3/4 cup self-rising flour
- 1 can sliced unsweetened apples, undrained (not pie filling)
Ro-Tel

Melt Velveeta and Ro-Tel together in microwave, stove-top or crock pot
- 1 pound Velveeta, cubed
- 1 can diced Ro-Tel tomatoes

Miniature version of the Greek snack
- Pastry:
- 2 8-ounce packages cream cheese, softened
- 2 cups softened butter
- 4 cups sifted flour
- Filling:
- 1 onion, finely chopped
- 3 tablespoons olive oil
- 1 10-ounce package frozen chopped spinach, thawed and well drained
- 1 teaspoon salt
- 1/4 pound feta cheese, crumbled
- 1/2 cup cottage cheese
- 1 beaten egg
- Mustard sauce:
- 1/2 cup mustard
- 1/4 cup brown sugar
- 1/2 teaspoon ginger
Fruit Pies

In a large mixing bowl, stir together the sugar and flour
- Apple:
- 6 cups apples, peeled, cored and thinly sliced
- 1/2 to 3/4 cup sugar
- 1 tablespoon flour
- 2 teaspoons cinnamon
- Blackberry:
- 4 cups blackberries
- 3/4 to 1 cup sugar
- 1/4 cup flour
- Blueberry:
- 4 cups blueberries
- 1/2 to 3/4 cup sugar
- 3 tablespoons flour
- Cherry:
- 4 cups tart red cherries, pitted
- 1 to 1 1/4 cups sugar
- 1/4 cup flour
- Gooseberry:
- 4 cups gooseberries, stemmed
- 1 cup sugar
- 1/4 cup flour
- Peach:
- 6 cups peaches, peeled, pitted and thinly sliced
- 1/2 to 3/4 cups sugar

Rolled Buttercream Fondant

1.In a large bowl, stir together the shortening and corn syrup
- 1 cup light corn syrup
- 1 cup shortening
- 1/2 teaspoon salt
- 1 teaspoon clear vanilla extract
- 2 pounds confectioners' sugar
Fried Pickles

Preheat the oven to 425 degrees
- 3 large Kosher dill wholes (we cheated here and used sliced dill chips)
- 3 eggs
- 3 tablespoons milk
- 1 cup flour
- 1/2 cup bread crumbs
- 1/4 cup Panko crumbs
- 1/2 cup cheddar cheese (finely shredded)
Saturday Night Chicken and Rice

Spray slow cooker with non-stick spray, pour in the soup, rice and water and stir with whisk until blended
- 24 ounces boneless, skinless chicken breasts
- 1 cup uncooked brown whole grain rice
- 1 cup water
- 1 can reduced fat cream of chicken soup
- 1 can sliced mushrooms
Baked Ziti

Place uncooked ziti in a large pot of salted boiling water and cook for 10 minutes
- 1 pound ziti or penne pasta, cooked
- 3 cups marinara sauce
- 2-3 cups roasted vegetables of your choice (mushrooms, zucchini, yellow squash, bell peppers)
- 2 cups mozzarella (or a mixture of Italian cheeses)
- 1 tablespoon fresh parsley, finely chopped
Eggs Deluxe

A Wilson family breakfast favorite!
- 8 slices bacon
- 1 pound mild sausage
- 1 can drained chopped mushrooms
- 6 slices bread, cubed
- 8 eggs
- 2 cups milk
- 1 teaspoon salt
- 1 teaspoon dry mustard
- 1 cup grated Velveeta
Bean-Cheese Pie

Low Calorie
- Crust:
- 3/4 cup flour
- 1/2 cup shredded Cheddar (2 ounces)
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/3 cup milk
- 1 egg, slightly beaten
- Filling:
- 1 can black beans, drained
- 1 can kidney beans, drained
- 8 ounces tomato sauce
- 1/2 cup chopped green bell pepper
- 1/4 cup chopped onion
- 2 teaspoons chili powder
- 1/2 teaspon dried oregano leaves
- 1/4 teaspoon garlic powder
- Top with:
- 1/2 cup shredded Cheddar (2 ounces)
