- 4 T grapeseed oil
- 2 lbs. chicken breasts
- 1 lemon, sliced
- 6 cloves garlic, minced
- 2 cups mushrooms
- 2 cups sun dried tomatoes
- 1/2 cup goat cheese
- 1 T basil
- 1/2 tsp. seas salt
- 1/2 cup raw or organic butter
Erin Oprea's Hummus Sandwich

Spread hummus on each slice of Ezekiel bread and add all of the other ingredients to assemble the sandwich
- 2 T red pepper hummus
- 2 slices Ezekiel bread
- 1/2 avocado, sliced
- 2 thin tomato slices
- 1/4 cup alfalfa sprouts
- Sliced red onions
Italian Dressing

Place all ingredients in a blender and blend until desired consistency is reached
- 5 T red wine vinegar
- 1/4 cup water
- 1/2 cup olive oil
- pinch of stevia
- 1/2 tsp. sea salt
- 1/8 tsp. ground black pepper
- 1 tsp. stoneground mustard
- 1 garlic clove, peeled
- 1/8 tsp. dried basil
- 1/8 tsp. dried thyme
- 1/8 tsp. dried oregano
Mac & Not Cheese

Place 1/2 cup water and all nuts in a blender
- 1 cup water
- 1 cup cashews or walnuts
- 1 T sesame seeds
- 1 1/2 tsp. yeast flakes
- 1/2 cup pimentos
- 1/4 tsp. onion powder
- 1/8 tsp. garlic powder
- 1/4 cup fresh lemon juice
- 1/4 cup grapeseed oil
- brown rice pasta
Olive Oil Cakes with Lemon and Thyme

Preheat oven to 350 degrees
- For Cakes:
- 1 T melted butter
- 1 1/3 cup sugar
- 2 T grated lemon zest
- 2 whole eggs
- 1/4 cups olive oil
- 2/3 cups whole milk
- 1 cup flour
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1 tsp. minced fresh thyme
- For the Glaze:
- 1 1/2 cup powdered sugar
- 2 T melted butter
- 3 T fresh lemon juice, or more as needed
Quinoa Porridge

Heat a saucepan over medium heat
- 1/2 cup quinoa
- 1/4 tsp. cinnamon
- 1 1/2 cup almond milk
- 1/2 cup water
- 2 T honey
- 1 tsp. vanilla
- pinch sea salt
Mocha Silk Pie

To make the crust, combine chopped pecans, brown sugar, grated chocolate, and salt
- Crust:
- 1 cup pecans, finely chopped
- 1/2 cups packed brown sugar
- 2 oz. weight semi-sweet chocolate, grated
- 2 T kahlua
- dash of salt
- Filling:
- 2 sticks butter (salted)
- 1 1/2 cups sugar
- 2 tsp. instant coffee granules
- 1 tsp. kahlua
- 3 oz. weight semi-sweet (or bittersweet) chocolate
- 1 tsp. vanilla extract
- 4 whole large eggs
- Serve with whipped cream.
Meatballs & Rice

- 1 lb. hamburger, raw
- 1/2 cup rice, uncooked - long grain or instant
- 1/2 cup water
- garlic
- chopped onion
- salt & pepper
- 1 can tomato sauce
- 1 can water
- 1 T Worcestershire sauce

For the Toasted Walnuts: Fill a small skillet with walnuts and heat over medium-high heat
- 2 pulled boneless chicken breasts, grilled, boiled or baked
- 1/4 cup Greek yogurt
- 1/3 cup chopped celery
- 2 shallots, chopped
- 1/3 cup halved grapes
- 1 whole-wheat sandwich thin or a bed of greens
Chocolate Peanut Butter Pie

Crust: Crush the oreos until they're fine crumbs
- For Crust:
- 25 whole oreos
- 4 T butter, melted
- Peanut Butter Filling:
- 1 cup creamy peanut butter
- 1 package (8 oz) softened cream cheese
- 1 1/4 cup powdered sugar
- 1 pkg. (8 oz) cool whip, thawed
