Erin Oprea's Classic Client Smoothie

Blend all ingredients until smooth
- 3/4 cup unsweetened vanilla almond milk
- 2 cups ice
- 1 scoop vanilla protein powder
- 1 T cocoa powder
- 1/2 frozen banana
- 1-2 T natural peanut butter or PB2
Fruit Kabobs

Slide fruit and cheese on toothpicks or kabob sticks
- pieces of fruit (such as red or green grapes, blueberries, strawberries, raspberries, apple cut into cubes, etc.)

Texas No Bake Cookies

Melt 10 tablespoons (1 stick and 2 tablespoons) of butter in a saucepan
- 10 T (1 stick & 2 T) butter
- 4 T cocoa
- 1/2 cup sweet milk (regular milk works too)
- 2 cups granulated sugar
- 1/2 cup peanut butter
- 1 1/2 cups oats
- 1 cup coconut
Toll House Golden Brownies

Preheat oven to 350. In small bowl, combine flour, baking powder and salt; set aside
- 2 cups unsifted flour
- 2 tsp. baking powder
- 1 tsp. salt
- 3/4 cup butter, softened
- 3/4 cup sugar
- 3/4 cup firmly packed brown sugar
- 1 tsp. vanilla extract
- 3 eggs
- 1 12 oz pkg. (2 cups) Nestle Toll House morsels
Erin Oprea's Whole Wheat Crepes

Beat the eggs, milk, butter (if using), and salt in a small bowl
- 3 eggs
- 2/3 cup skim milk or unsweetened almond milk
- 2 T melted unsalted butter or butter substitute (optional)
- 1/4 tsp salt
- 1/3 cup whole-wheat flour
Personal Pizzas

Spread sauce on slices of bread
- 2 slices sprouted grain bread
- 1/4 cup organic pasta sauce
- 1/4 cup crumbled goat cheese
- chopped onion & bell pepper
Strawberry Banana Cupcakes

The Cupcakes: Cream butter and sugar
- 1/2 C butter (1 stick)
- 1 C sugar
- 2 eggs
- 1/2 C Greek yogurt (you could also use sour cream)
- 1 t baking soda
- 2 C all-purpose flour
- 1 t vanilla
- 1 C mashed bananas (about 2 bananas)
- 1 C macerated strawberries
Homemade Chicken and Noodles

Cover chicken in 4 quarts water
- 1 whole cut up fryer chicken
- 2 whole carrots, diced
- 2 stalks celery, diced
- 1/2 whole medium onion, diced (optional)
- 1 tsp. salt
- 1/2 tsp. turmeric
- 1/4 tsp. white pepper (more to taste)
- 1/4 ground thyme
- 2 tsp. parsley flakes
- 16 oz. weight frozen "homemade" egg noodles
- 3 T all-purpose flour
Erin Oprea's Apple Cinnamon Oatmeal Pecan Crunch

Spray the inside of a slow cooker with cooking spray and add all of the ingredients except the pecans
- 1 cup steel-cut oatmeal
- 2 1/2 cups water
- 1 1/2 cups unsweetened vanilla almond milk
- 1 cup chopped apple
- 1 T maple syrup/desired sweetener
- 1 1/2 tsp ground cinnamon
- 1/2 tsp vanilla extract
- 1 handful of pecans
Porcupine Meatballs

Mix meatball ingredients together and roll into balls
- Meatballs:
- 1 lb ground beef
- 1/2 cup uncooked rice
- 1/2 cup water
- 1/3 cup onion, chopped
- 1 tsp. salt
- 1/2 tsp. celery salt (optional)
- 1/8 tsp. garlic powder
- 1/8 tsp. pepper
- Sauce:
- 15 oz. tomato sauce
- 1 cup water
- 2 tsp. Worchester sauce
