Erin Oprea's Oven-Roasted Spicy Almonds

Preheat the oven to 425 F
- 1 6 oz bag sliced almonds
- 1 egg white
- 1 T honey
- 1 T light brown sugar
- 1/2 T cayenne pepper
Cashew Chicken Lettuce Wraps

Combine aminos and honey in a small bowl and set aside
- 2 T Bragg's liquid aminos
- 2 T honey
- 2 T grapeseed oil
- 1 1/2 lbs. chicken breasts, cut into 3/4 inch pieces

- 2 cloves garlic, finely chopped
- 1 T grated ginger root
- 1 bunch scallions, trimmed & sliced
- 1 8 oz. can sliced water chestnuts, drained
- 1/4 cup cashews, toasted
Cinnamon Bun Pancakes

In medium bowl, combine flour, sugar, salt, baking powder and cinnamon with a whisk
- 1 1/2 cup all-purpose flour
- 3 T white sugar
- 1/2 tsp. salt
- 4 tsp. baking powder
- 1 T cinnamon
- 2 whole eggs, beaten
- 1 cup milk
- 2 T corn syrup
- 1/4 cups butter, melted
- 1 T vanilla
Raspberry Venison Skillet

- 2 T maple syrup

Preheat the oven to 375 F
- 3 super ripe bananas
- 2 T melted coconut oil
- 3 T maple syrup
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 1/2 cups almond flour
- 1 small package blueberries
Three Cheese-Stuffed Shells with Meaty Tomato Sauce

Cook pasta shells for half the cooking time; make sure not to overcook
- 8 oz. weight Jumbo Pasta Shells
- 30 oz. weight Whole Milk Ricotta Cheese
- 8 oz. weight Parmesan Cheese, Grated, Divided
- ½ cups Grated Romano Cheese
- 1 whole Egg
- 12 leaves Basil, Chiffonade
- 2 T.Minced Parsley
- Salt And Pepper, to taste
- 2 T. Olive Oil
- ½ whole Medium Onion, Chopped

- ½ pounds Italian Sausage
- ½ cups Red Wine

Chicken Fajitas

- 2 lbs. chicken breast
- 2 T coconut oil
- 1 green bell pepper
- 1 red bell pepper
- 1 white onion
- 2 cloves garlic, finely chopped
- 1 tsp. sea salt
- 1 tsp. cumin
- 1 tsp. chili powder
- 1 can organic black beans
- 1 pkg. sprouted grain or brown rice tortillas
Panko Mozzarella Sticks

- 16 pieces string cheese, removed from wrappers
- 1/2 cups all-purpose flour
- 2 whole eggs
- 3 T milk
- 2 cups Panko bread crumbs
- 1 T dried parsley flakes
- canola oil, for frying
- marinara sauce, for dipping

- ◦2 eggs

- ◦1 tablespoon unsweetened cocoa powder
- ◦2 teaspoon instant espresso powder
- ◦1 tablespoon water
- ◦1/2 cup buttermilk
- ◦Kahula or Espresso (optional. you won’t need more than 1-2 tablespoon)
